WHEN MAKING MACARONI SALAD, IS THERE SOMETHING TO PUT IN THE RECIPE TO KEEP THE MAYONNAISE FROM SEPARATING FROM THE MACARONI NOODLE. THE INGREDIENTS THAT I USE ARE CELERY,PEAS,GREEN PEPPER,ELBOW PASTA,SALT,PEPPER AND MAYONNAISE. AFTER I COOK THE NOODLES, I DRAIN, LET COOL, AND MIX ALL INGREDIENTS TOGETHER. AFTER ALL IS MIXED, I THEN REFRIGERATE. AFTER REFRIGERATION, THE MAYO SEPARATES FROM THE NOODLES AND EVEN THOUGH I RE-MIX, IT WON'T STICK. IS THERE ANYTHING THAT I CAN ADD OR DO TO THE RECIPE TO ALLOW THE MAYO TO STICK TO THE PASTA.
Answers:
Tuna is good for helping the salad stick together. If you don't like tuna than maybe you should put less mayo in it. Or allow for the noodles to sit for a minute after you frain them. That will allow for the excess water to drain out or evaporate so that you can have noodles that will most likely stick to the mayo.
Other Answers:
I just keep stirring it occassionally. I make almost the exact salad you listed but add onions and tuna to it too.
Use drained macaroni and add a little oil to the macaroni before adding in the mayo.
Always blend the mayo only just before serving. Will solve the problem.Keeping it for sometime may allow the Salad to leave some moisture hence the Mayo thin downs. If it is a readyto eat Mayo then it will never curdle.
I also make this salad but I use Miracle Whip mayo. Maybe the brand of mayo u are using is the problem.. try making your salad and use Zesty Italian salad dressing..makes a wonderful pasta salad..add all sorts or other vegies as well. tc and gl
Stop cookng the Macaroni just before it's done, make sure it is cold before adding the mayo and leave out the salt, you can salt to taste when you serve.
I suggest using miracle whip instead of mayo, its gives it a little "zing" and you never have to worry about it seperating.
That used to happen to me all the time until I started draining the noodles better. The water is what keeps the mayo from adhering to the pasta.
