Here are some friends with simlar question as we.And I have this question for many days,anyone help us?

Answers:
If the juices run clear, it is done. If cloudy/opaque, it is not done.

Try not to cram them too tightly on the skewer, so heat gets directly to every side. You can alsways sacrifice one bite and break it open and see.

doesnt take long to cook a chicken-kabob, just taste one of the pieces,if it schreds then its done

carefully cut open up one piece iwth a knife.
If you cut across the skewer, it will not fall off.
If it is solid white in there, it is done, if opaque pink - not.

you can take the chicken off the grill, and put it against a plate, wait a few seconds, and then push the meat. at first, it's hard to tell, but after a while you get good at it. when the meat is really firm, it's done. you can also do this with red meat, which is actually easier

also, it's ok if the chicken is not completely done, but is really close to done. you have to remember, if the piece is 165 degrees F, and you take it off the grill, it'll still be cooking while not on the heat.

since it's a kabob though, and the meat is more spread (higher surface area) it'll cool off faster, and won't cook as long as a full piece of meat would
