Ok this is my own recipe and my son used my pesto sauce for cooking class and got an A+ plus when I went to parents evening they did not ask but said he should do better considering his Father is a professional chef.
I take 150 grams fresh pine nuts and put them is a foil covered tray and ever so lightly toast them
I use 150 grams lemon basil growing in my kitchen window not just the leaves but some of the flowers as well since they are more aromatic. 4 grams of smoked garlic crushed, a blend of red, green and white pepper corns coarse ground about 1 gram
Now for the cheese I use a 50/50 blend of Memolet and pecorino both are very hard dry cheeses but with different character Memolet is like a a dried sharp orange cheddar.200grams
A bit of lemon zest, and a tiny splash of seasoned rice vinegar 1/2 teaspoon>''''''''''''''''''''''''''''''... PESTO:
Place ingredients in bowl of food processor. Process until smooth, using rubber scraper to push down the sides occasionally. Makes 1/2 cup. Variations: - add 3/4 c freshly grated Parmesan Cheese PASTA:
Boil a large pot of water; cook pasta until al dente. While pasta is cooking, prepare pesto; set aside, covered. Steam carrots. Meanwhile, in skillet, heat oil. Add zucchini and peapods. Stir continuously until crisp/tender. When pasta is done, drain well; toss pesto with noodles until they are well coated. Then toss in vegetables. Garnish with pepper and cheese. VARIATIONS: - add 1/2 c Parmesan cheese to Pesto

you have a pasta maker?
1) Buy Pesto and Pasta.
2) Boil Water.
3) Put Pasta in said boiling water
4) Open the Jar of Pesto while Pasta cooks
5) Drain Pasta
6) Add Pesto (Repeat steps 5 and 6 until satisfied.)
7) Eat the Pasta Al Pesto with some light white wine.

You can buy store bought pesto or make your own
1 bunch fresh basil
6 cloves garlic
a hand full of pine nuts
hand full of parm chz
ex virgin olive oil

add basil pine nuts and parm and pulse till it forms a paste add just enough olive oil to make it moist. You can always add more.

boil pasta place strain then in a saute pan you add pesto, (opt) a little heavy cream you little cream I chooose not to I use more olive oil toss pasta with and then add some parm chz put in a bowl and eat.
You need fresh basil leaves equaling a cup,1/4 cup of pine nuts,two cloves of garlic 1/4 cup of grated Parmesan cheese pepper and extra virgin olive oil.Place all the ingredients in the food processor except for the cheese and oil.Add the oil slowly and when you have a paste you can add the cheese.You can use any pasta although this is pretty good with penne or bow tie,add some pepper and you are good to go.A great way to give it a kick is by adding some pieces of chopped chicken and a little salt,add a couple of cheery tomatoes halved and voila:)
