after you cut the fries put them in a bowl full of water, salt & vinegar.
for about an hour then fry them.
you will get that CRUNCHY taste.

Cut New Potatoes in to wedges, and deep fry them in peanut oil........they taste great!
slice fries thin, use russet. let them soak in ice water for about 20 min, then pat dry and fry in med high heat until golden brown.
Cook (fry in oil) them once to cook the inside, take out and cool off. Turn temp up under oil and then fry them again. That makes them like restaurant french fries.
If you want them to taste like McDonald's fries, add 1/2 cup sugar to 2 quarts of water, and soak fries overnight in refrigerator. Drain and pat dry. Fry on medium heat for 2 minutes, remove and cool. Turn up heat on oil and re-fry until golden brown. Add a little salt, and there you go.
Blanch your chips in a cooler oil. Around about 150 degrees C for Four Mins. (A cube of day old bread will colour in around 3 mins at this temp) Remove from fat and turn up the heat to 190 Degrees C and fry until nice and golden (A cube of bread will colour in around 50 seconds at this heat) Drain your fries well and cover liberally in salt and enjoy with ketchup, mayo or mustard
christie003d had it correct that is the best way don't cook them too long the first time though after you fry them for about 5 min take them out and put them in a bowl and cover them with foil so that they keep cooking to soften them then as christie003d said turn up you fryer heat and fry them till they are crispy. Start off at 325 degrees first fry then 375 second that should do it. Happy frying.
Well since my family has high cholestrol. We bake ours. But we buy the ranch dressing mix, and through the potatoes in that and toss and put on the pan and baked
