Slightly beat between 3 and 6 eggs in a large bowl. Add in between 1/2 and 1 tsp salt. Stir in as much flour as you can--it will be very, very stiff. Roll out on a well-floured surface until about 1/8" thick. Cut into noodles, about 1/4" wide, and 4-5" long. They will expand a lot when cooked.
