Custard base recipe
Ingredients:
4 egg yolks, 1/2 pint (250ml) milk, 1/2 pint (250ml) double/heavy cream, 4 oz (100g) sugar or caster sugar, 2 teaspoons vanilla extract (or according to taste - everyone's different!)
First of all scald the milk (bring slowly up to boiling point in a saucepan). Separately, mix together the egg yolks and sugar until thick. Pour into this the hot milk, whilst continuously stirring. Then pour the mixture back into the pan and heat gently, stirring until the custard thickens - DO NOT BRING TO THE BOIL OR IT WILL PROBABLY CURDLE. When you can see a film form over the back of your spoon it's time to remove the saucepan from the heat. Leave to cool.
This is the custard base and one you can use in many other recipes.
When the custard base is cold, stir in the cream and vanilla extract, then transfer the whole mixture into an ice cream maker and freeze according to the manufacturer's instructions.

1/2 pint (250ml) single/light cream, small tin of condensed milk, 1-2 teaspoons vanilla extract (according to taste)
Pour all ingredients into a mixing bowl and mix until smooth. Transfer the whole mixture into an ice cream maker and freeze according to the manufacturer's instructions.

1 cup whole milk
3 cups heavy cream
4 egg yolks

3/4 cup sugar

Heat the cream, milk and sugar in a heavy-bottomed saucepan, stirring occasionally until the sugar is dissolved and the mixture is hot. Place the egg yolks in a bowl and whisk briefly. Still whisking, slowly pour in about 1 cup of the hot liquid. When the mixture is smooth, slowly pour it into the liquid in the saucepan, whisking constantly. Cook over medium heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon, about 8 minutes. Be sure not let the mixture boil at any time or will curdle. Strain into a clean bowl and use as directed in the specific recipes. Stir in the nuts.
Makes 1 quart.

Marie's Homemade Vanilla Ice Cream
Gallon
Ingredients :
4 x Eggs
1 1/2 cup Sugar
2 tbl Flour ***
4 can Milk - 2%
1 can Eagle brand condensed milk
2 tbl Vanilla ***
Method :
*** 2 Tb flour & vanilla -2 heaping soupspoons
*** Using a whisk beat eggs, sugar & flour until smooth & creamy in a large ( 5 qt. ) microwave safe bowl. Add 2 cans of the milk. Cook in microwave for 2 min. on high, remove & whisk again to break up any cooked eggs. Cook again on high for 2 min. more & whisk again. Cook for 2 min. more & whisk again. A total of 6 min. While whisking after the last 2 min. add the other 2 cans of milk, the EAGLE BRAND & vanilla. Place this mixture in the container for the ice cream machine with the paddle in it. Put the cover on & put in fridge to cool. By putting it in the fridge for a good amount of time it reduces the length of time the machine has to work.

i think it is made with ice and cream ....that's what i gained from the name "ICE CREAM"

Vanilla Ice Cream - Makes 1 gallon
Ingredients:

2 cups sugar
1 quart of milk
1/4 cup flour
1/2 teaspoon salt
4 slightly beaten eggs
1 tablespoon vanilla
1 1/2 quarts light cream
Directions: Scald milk. Mix together flour, sugar and salt. Add just enough milk to flour mixture to form a thin paste. Stir paste into hot milk. Over low heat, cook mixture until it slightly thickens about 15 minutes. Stir constantly.
Add hot mixture gradually to beaten eggs, cook over low heat for 2 minutes stirring constantly (do not over cook as the eggs may curdle).

Cool quickly in the refrigerator. Do not allow to cool at room temperature. Add cream and vanilla to cooled mixture. Pour into freezer can: fill only 2/3 full to allow for expansion. (Follow ice cream maker instructions).

Chocolate Ice Cream - Makes 1 gallon
Add to the vanilla icecream recipe......

For chocolate icecream, add 4 squares unsweetened chocolate to milk before scalding. After scalding, beat with a wisk until chocolate flecks disappear. Increase sugar by 1/2 cup.

Strawberry Ice Cream - Makes 1 gallon
Add to the vanilla icecream recipe......

Omit 3 cups light cream, add 1 quart washed and hulled strawberries which have been mashed and sweetened with 1/2 cup additional sugar. Add a few drops of red food coloring if your wish.

Peach Ice Cream - Makes 1 gallon
Add to the vanilla icecream recipe......

Omit 3 cups light cream. Add 1 quart crushed peeled fresh peaches without seeds. Mix 3/4 cups additional sugar.
