Osso Buco is a very easy dish to make. First you season and dust your shanks with flour. Next you remove them from the pan that you're using and add your mirepoix, and sweat till tender. Then add some dry red wine (merlot, zinfindel, Cab Sauv.) and reduce almost all the way. Add the shanks back into the pot and cover almost completely with stock (chicken, beef.. Veal is ideal).Then put the pot in the oven on about 275 for about 6-8 hours or until it falls apart.
When it comes out, strain the vegetables, reduce the cooking liquid, add a little demi-glace, then serve it over some polenta with the vegetables and that sauce..... LOVE

By that I mean. Season your meat the way you want it. Season the vegies the way you want it. Add the amount of water you want and then put it in and set it on LOW and then walk away. 10 to 12 hours (perferably 12 hours) later come back and enjoy.

Very low heat and longer cooking time is the key. Helps to keep it moist, like in a broth.
