I use a large cast iron griddle that covers 2 burners. I can make a dozen small pancakes on it at once.
First of all follow the instructions for mixing the batter.Make sure that the batter has consistancy and is not runny. I prefer using Aunt Jamima. In the meantime preset the oven to 325 degrees. Slightly spray a long baking pan with canola spray the pan should be about 18 to 20 inches long and about 12 inches wide. Spoon batter using a large tablespoon and make 12 pancakes. You should leave this in oven for 5 minutes or until you see little bubbles formed on top of all the pancakes and, this means you have to flip them all over. When you flip them over leave there for another 5 minutes or until a sharp tip knife inserted into middle of pancake comes out clean. the pancakes will be a beautiful golden brown. enjoy

You just make a freaking massive load of pancakes.
Either feed them as you cook them, which will make some people hungry while they wait, or make them an hour ahead of time and put them in the oven set on low, on a cookie sheet, to keep them warm with a ever so slightly moist towel over the top of them.

I use my blender to make pancake batter for a lot of people...it goes a lot faster and I can pour out what I need and pop the cap back on to use as other guests arrive (nothing worse than cold or reheated pancakes!).
If you don't mind going to the expense, a lot of cookware shops and websites have an iron griddle that lays over two burners on your stove giving you, essentially, a 15 inch frying pan. That's a lot of surface area to make pancakes on.
If making bacon to go with them...spread a layer or two of papertowels on your largest microwave safe tray or plate, spead one layer of bacon strips on it, top with one layer of paper towels and microwave on high for 45 seconds to a minute and a half depending on the strength of your microwave. It comes out perfectly cooked and less greasy than if you fried it in a pan. Works with turkey bacon too.
