I love the following recipes. Anyone of the following choices can be lite and fluffy. Just buy "Bisquick."

Pancakes
This is our all-time favorite recipe for pancakes! It’s simple and tastes so good.

2cups Original Bisquick? mix
1cup milk
2eggs


1. Heat griddle or skillet over medium-high heat or electric griddle to 375°F; grease with cooking spray, vegetable oil or shortening. (Surface is ready when a few drops of water sprinkled on it dance and disappear.)
2. Stir all ingredients until blended. Pour by slightly less than 1/4 cupfuls onto hot griddle.
3. Cook until edges are dry. Turn; cook until golden.

Note: If you like thin pancakes, use 1 1/2 cups milk.


Buttermilk Pancakes
Nothing beats the taste of buttermilk in pancakes. Top these all-time favorite pancakes with maple syrup, fresh fruit or your favorite jam.

2cups Original Bisquick? mix
1 3/4cups buttermilk
1teaspoon baking soda

1. Heat all ingredients in 1-quart saucepan over low heat, stirring occasionally, until warm.

Makes 4 servings
Time: 20 minutes

These are ethereal, clouds of egg made into cakes; they also develop a very nice crust. Add more sugar if you'd like them sweet.

1 cup milk
4 eggs, separated
1 cup all-purpose flour
Dash salt
1 tablespoon sugar
1[1/2] teaspoons baking powder
Butter or canola or other neutral oil as needed

mix them well and get the temperture right and also the smaller you make them the lighter they will be. Use a good batter recipe and don't overwork it- excess beating makes them flat. A few lumps are OK.

make the batter in a food processor instead of by hand

Add just a little extra baking powder or use baking soda and buttermilk instead of water or milk. Error on the side of too little liquid.
Or whip batter by hand or with electric mixer until just mixed and then allow to sit before pouring.
Or get griddle hot enough so that a drop of water "dances" and keep at correct temperature and flip only once when "bubbles start to open."
Do all three and you have have 1/2 to 3/4 inch pancakes that are light and fluffy.

mix 2 cups sifted flour/4 tsp bp/1 tblspn sugar together in to a bowl. Add 1 egg, 1 to 1 1/2 c milk, 1/2 tsp vanilla and 1 tblspn melted butter/marg. mix together until just mixed - put into a pourable container with spout - pour out rounds to whatever size u want onto a hot grill that has been greased. Cook until air holes show and it becomes slightly dry on the top - flip - continue cooking for about 1 minute - remove and eat. As the mixture becomes thick from sitting - add small amount of milk to thin out slightly. Makes very good pancakes (called Griddle Cakes from a Jewel Shortening recipe dated in the 1950's - notice shortening replaced by butter/marg.) Enjoy! Hi Katz,
You gotta love all of these people who have taken the time out of their busy day to answer your question on lite and fluffy pancakes. I am convinced after many years of observation that these sunrise surprises (also known as griddlecakes)are indeed a spiritual awakening of sorts. How else can you describe the outpouring of response we have here. All in support of that "perfect" pancake. I am absolutely amazed of all the people out there that know of the term of "water dancing on a skillet". I'm pleasantly shocked and delighted to find, even in this relatively small sampling, the degree of knowledge of this rather obscure term for the proper temperature of a skillet
neccessary in order to prepare these wonderful delicate disks of divine intervention. Also the outpouring of personel expertise is astounding to say the least. All with the same intentions and beliefs. To find that one absolute in life. To taste the elusive breakfast king of childhood, the perfectpancake. Yes it is one word. If you never had it, then it may be two words. But for those of us who have partaked of these wonderous circular clouds of breakfast heaven it is evident that one word is sufficient. And it certainly appears as though the great majority of you folks have found the "perfectpancake". Alas for the rest of you who have not yet achieved the pinnacle of pancake perfection, I fear that the road ahead may be fun and fattening, but you must persevere, do not hesitate to continue on in the quest for perfection. As much as you struggle through stacks and stacks of so-called pancakes, you will eventually find it. Someday. But until then may I suggest the trial and error method from the many recipes graciously supplied herein. You will find it, trust me you will.
I'm getting hungry, I need perfectpancakes now, please pass the syrup. Speaking of which, I know it cost a lot more than regular syrup, but do try 100% maple syrup, it really does make a huge difference. Actually, contrary to just about everyone's advice, DON'T MIX THEM WELL. Mixing, like kneeding dough, activates the gluten in the flour, making your pancakes chewy instead of fluffy. Sift the flour to reduce lumps BEFORE you add any liquid, then stir as little as possible - just enough to incorporate everything.
