Pecan Spirals
Ingredients
* 1 3-ounce can pecans
* 2 tablespoons sugar
* 1 1/4 teaspoons ground cinnamon
* 1 1/3 cups all-purpose flour
* 1/3 cup confectioners' sugar
* 2 tablespoons cornstarch
* 1/4 teaspoon salt
* 3/4 cup margarine or butter
(1 1/2 sticks)
* 1 tablespoon vanilla extract
Directions
1. In 10-inch skillet over medium heat, cook pecans, shaking skillet frequently, until pecans are lightly toasted.
2. Remove skillet from heat; cool pecans slightly.
3. In food processor with knife blade attached, finely chop toasted pecans with Sugar and cinnamon. (Or with knife, finely chop toasted pecans. In small bowl, mix pecanss with Sugar and cinnamon.)
4. Set pecan mixture aside to cool Completely.
5. preheat oven to 325'F.
6. In large bowl, mix flour, confectioners' Sugar, cornstarch, and salt.
7. Cut margarine or butter into small pieces. With hands, knead margarine or buttcr and vanilla extract into flour mixture until well blended and mixture holds together.
8. Turn dough onto floured surface. With floured hands, gently knead dough until smooth, 5 or 6 times, sprinkling dough with extra flour if needed.
9. On well-floured Surface, with floured rolling pin, roll dough into a 12" by 8" rectangle; sprinkle pecan mixture over rectangle, leaving 1/2-inch border all around. With rolling pin, gently press pecan mixture into dough.
10. Starting at a 12-inch side, carefully roll dough tightly, jelly-roll fashion, to enclose pecan filling. Pinch ends and seam to seal. Wrap roll in plastic wrap and freeze 30 minutes or until firm enough to slice.
11. With serrated knife, cut dough into 1/2-inch thick slices.
12. Place slices on two ungreased large cookie sheets, about 2 inches apart.
13. Bake 15 to 20 minutes until cookies are golden, switching cookie sheets on oven racks halfaay through baking time.
14. Cool cookies on wire racks.
