Hi-

Hi Id like to use the canned Ortega Whole Green Chiles and stuff them with pepperjack cheese and heat them up in order to melt the cheese and warm the dish........How do I do this?

Thanks for you help

PS. If you can tell me any other foods that would go with this, so I could have them for lunch, I would much appreciate it.

I was getting you my recipe, but then I re-read your question and then decided that your mind was made up about a certain brand instead of fresh, so here is the web site to answer your question and to provide other foods to go with them.

stuff chile in peppers put in oven
STUFFED PEPPERS

6 lg. green hot peppers (type used for chile rellenos)
4 tbsp. or more oil
2 c. white cheese, sliced or grated
5 eggs, separated
3/4 c. flour, approximately & add salt, pepper & garlic powder to taste

Fry peppers, one or two at a time, in hot fat, turning often. As they heat, skin will crinkle and turn slightly brown. When they are crinkled all over, remove from oil and wrap in paper towels. Cool and peel, remove seeds, being careful not to tear pepper when you slit it. Stiff peppers with a toothpick. Beat egg whites until stiff, add yolks to whites and beat together. Add enough flour to make a thin batter. Dip stuffed pepper in rest of the dry flour and then in the batter. Fry in the same oil in which peppers were fried. The batter will puff and turn a delicate brown. Take peppers out of the oil and let them sit on paper towels so that excess oil will be absorbed.

Cut off the top of the chili pepper then stuff the cheese in there wrap the chili pepper in Bacon to give it really good flavor then grill them.
GRILL ROASTED GREEN CHILES STUFFED
WITH GUACAMOLE

8 Anaheim or long green chiles
olive oil
4 ripe haas avocados
4 ripe medium tomatoes, halved, seeded, and coarsely chopped
1 small onion, finely chopped
2 cloves garlic, minced
3 small scallions (white and green parts), finely chopped
3/4 cup chopped fresh cilantro
3 tablespoons lime juice
1 small jalapeno, seeded and finely chopped
kosher salt and freshly ground black pepper

Grill the chiles: Heat the grill or broiler. Lightly brush the chiles with oil, grill on high heat until very blackened and blistered, turning frequently, about 15 minutes. Seal the chiles in a paper bag, or foil, and allow them to steam 10 minutes. Peel away the skin being careful not to rip off the stem.

With a paring knife, make a vertical slit from the top of each chile to about 1/2 inch from the tail and remove the seeds. Be sure to leave the ribs in, or the flesh will come with them.

Prepare the guacamole:

Peel and pit the avocados and put the flesh in a large bowl. Add the tomatoes, onion, garlic, scallions, lime juice and jalapeno; mash with fork until blended but still fairly chunky.

Season to taste with salt and pepper.

Spoon the guacamole into the chiles. Serve chilled or at cool room temperature.
buy fresh long green chilies.. pan sear them for a couple of minutes, then peel the skin.
slice them down the middle and stuff them with Monterrey jack cheese (a little) and shredded chicken or ground beef taco meat.
i like chicken! close them up by a toothpick.
then dip in egg then roll in flour you can then bake or just brown the breading for a few in a little cooking oil on the stove.
WA-la.. they are done!!

but for me, AFTER i brown the breading, i put in a baking dish, pour some green tomatillo sauce, a little Monterrey jack cheese and bake them for about 10-15 minutes.. and girl,, they will be delicious!!!!!!!!!
woo that made me hungry!
