This is the one-and-only use I have for that sprayer attachment on my kitchen sink. Break off the stems, being careful to leave the caps intact. Don't throw the stems away, though.

Put the caps, stem-side down on a baking rack (or cooling rack), right in the sink. Set the (cold) water faucet on "high", and blast the mushroom caps with the sprayer attachment. Really let them have it. Then, just let them sit there and dry thoroughly. The idea is not get water into the underside of the mushroom; THAT'S what gets them soggy. Water in the gills. BTW, this applies to all "capped" mushrooms, not just portabellas.

As for the stems...you don't have to be too careful with them. Wash them, cut off any tough/fibrous parts, and cut them into little chunks. Put the chunks in salad, or into an omelet.

do not wash mushrooms, wipe gently with a paper towel, they will get soggy otherwise, portabello , sprinkle with olive oil, extra virgin, lightly with balsamic vinegar, aged vinegar, salt pepper, grill on bbq, put on bun with lettuce, tomato salt pepper, cold beer ha ha Just use a clean, damp towel to clean them off. Never put them in water - they're like sponges. Same as with strawberries.
