My favorite way to cook salmon is..
Sprinkle the salmon with lemon pepper, place it in a dish add vegetables on top(whatever you like) season the veggies with salt and pepper, add half a cup of wine, balsamic vinegar (about a tablespoon). Bake for about 30 minutes. you can change the seasonings to whatever you like, put whatever veggies you like. so its an easy and good recipe.

I use a 7 up batter--mix some corn meal with flour, egg, and 7up. Don't actually follow a recipe, you'll know when it looks right. My wife does the dry ingredients separately then dunks in the wet. Link has other ideas:

I guess it depends on if you want it fried, baked, or broiled. If you want to fry it, you can try House Autry Seafood Breader. I have used it and it is very simple. No batter mix or anything...you just bread the fish and fry it. It has a really good flavor. just roll your fish in dry cornmeal and fry them. real good
Down home we batter and deep fry 'em 'til they just float. But baked with butter, garlic, lemon and parsley gives them a different flavor altogether!
