    I follow the brownie box instructions why do my brownies have hard edges?

i do like they tell me on the box. I cook it for the exact time htey tell me to. the only hard part is the edges. the rest is chewy.Am I not putting enough oil on the edges or what?

I usually check the brownies to see if the edges are crisping faster than the middle, if they are, I line the edges with a strip of aluminum foil to keep them from cooking faster than the middle. Try not to over grease the edges of your baking dish if you use metal, pyrex glass works to cook a bit more evenly, but you still have to watch the edges.

They all do that especially if you cooked them too long or if your batter wasn't even in the pan!

Cut the hard edges off, and you have brownie sticks. Yum, that is what my aunt does. No it happened to me before all the time so now what i do is about 15 min . before their done i put aluminum foil around the edges so they don't harden. Try it , It keeps them from hardening,

put an oven thermometer in your oven to make sure that it is at the right temperature. Most ovens cook at different temperatures then they say. You need to check to see if the oven is cooking at the temperature it says it is.

15 years of food service If you're actually using oil, shortening (Crisco/margarine) works better in my experience.

Oven temp may be too high. Check with an oven thermometer. I once lived in a place where the oven was fine at 300 and 325, but 350 was actually nearly 400.

Are you putting the pan in the middle of the oven? Putting it high or low can make a big differenence. they all do to a point, you could try putting foil around the edge durring the last 15 cooking minutes.
