Kids really want to help, so we have our son peel carrots and cut up cucumbers and mushrooms with a pie slicer or a plastic knife (he's 4). And check out some cooking shows (we're addicted to Good Eats), to know what the heck they're talking about!

You can make cooking more fun by including everyone. Have the kids mash the potatos, have your husband or wife chop. Give everyone a task. It can be fun!

Do you have a place called "Let's Dish" near you? We have it here in MN...see their site, but the worst thing you can do is fast food if you want to keep a think and healthy family. Try dishes that can last for days...casseroles, chili, soup, lasagna, pasta is the easiest in the world to make. Veggies are easy to make by steaming them and adding a little butter. Just plan ahead each day so you aren't in the kitchen at 5pm wondering what you're going to make. Consider trying a new recipe each week and taking a cooking course. Get the kids and dad involved in cutting veggies, or setting the table and doing dishes so you aren't a lone in there! ;)
Let the family help you in the preperation of the food. Make a somewhat larger amount and preeze it for another night's use.
you said "now that i have a family". plan your meals, purchase items, plan ahead. prepare items in morning. put in fridge. take out your pans etc., when you get ready to prepare meal, start it, clean up behind yourself (or get family member to do that as you cook). pour yourself a glass of wine, sit down and let the food cook until the last minute things need to be done. let your family do the clean up! or at least help.
salads can be prepared early without dressing, put in your salad bowl, wet a couple of paper towels and lay over top & tuck in around sides...just don't toss. layer the salad & toss when you're ready to serve.
do as much oven cooking as you can & get a cook book for 1 pot meals; stir fry; oven cooking; casserols.
enjoy. make a game of it. get your creative juices going!

Since you don't like to cook, do simple meals at first. Then as you get experience try different things.
First stop looking at cooking as a chore. Think of it as a learning experience. take some classes or get a friend to teach you. If all else fails look into a personal chef to do the cooking for you.
