    I have 4.43lb of pork spare ribs and eight people to feed what should I do?

I am trying to make them stretch so everyone can have the whole meal that I cook. What should I cook with them by the way?

Lots of side dishes. Salad, bread, mashed potatoes (or other kinds of potatoes) a vegetable (carrots, broccoli, asparagus, etc) and dessert.
corn on the cob, potato salad, beans. man there is plenty of stuff you can mix with that. you'll be fine.
Potato salad or cole slaw with baked beans
Smoke em low and slow on a grill/smoker.

Serve corn for getting all the fun stuff out of the teeth and have a cool potato salad to set the palette off.
Bake plenty of potatoes, maybe think of corn on the cob, figure 2 cobs per person and maybe a couple extra. If you have a desert and mention it prior to everyone dishing up they'll save space for desert too. Could also have some buns or maybe some form of bread.
Make a nice dry rub consisting of the following: salt. pepper, cumin, garlic powder, onion powder, cayenne (use lightly), cinnamon (also use lightly), thyme. Put them in a baking pan or dutch oven with some chicken stock. Let them cook in the over for an hour on low heat, then throw them on the grill. For a great BBQ sauce: Cider vinegar, molasses, ketchup, worcheister, garlic, ginger, soy, hoisin sauce. Play with your measurements. Add a little spice to taste. Leave the sauce off the ribs. Let the guests apply it if they choose. If you like your sauce sweeter; add honey. Good luck.
Side dishes, fruit salad, lettuce salad, red beans, cabbage, cook with bell pepper, onion , mushrooms, tomato sauce salt & pepper to taste, serve over rice, this is so good.I have used rotel too!
Make a big bowl of potato salad
some corn on the cob
and a green salad..
That should be more than enough.
With a nice dessert afterward. Maybe ice cream for the heat...and it's something you don't have to cook! Get a special flavour or two so your guests can choose...with a plate of danish butter cookies to go with it and look nice on the table!
Once your ribs are done cut them into pieces before putting on the serving platter...
you'll see that there will probably be some pieces left at the end of the meal!
1/2lb per person is an ample serving size for pork spare ribs.

That said, what we do sometimes if we're concerned about that is add another entree. In other words, you could throw some chicken on the grill (or into the oven) too, so folks would eat some ribs and also some chicken, having smaller than normal servings of each.

If you're doing them bbq style, then keep that theme going with bbq chicken. Typical (traditional) sides for a crowd would be baked beans, potato salad, cole slaw, rolls, then something like watermelon or fruit salad for dessert.

If it's not cookout/bbq style, then just find a theme and stick with it.

Asian style ribs would mean marinating your chicken in teriyaki sauce before cooking... sides would be something more like fried rice (if you're afraid to make it, get several containers from a restaurant and just reheat it) or sesame noodles (easy to make or available at deli) and stir-fried veggies... some frozen or deli eggrolls, have duck sauce for dipping, dessert is fortune cookies and almond cookies.

You want southern food? Do bbq ribs, some fried chicken, macaroni and cheese, a big pot of green beans, cornbread and have a plate there with sliced cucumbers and tomatoes for those who want garnish. Sweet ice tea, dessert could be a fruit cobbler.

If you're not used to cooking for a crowd, don't hesitate to use store-bought or deli items as side dishes for your homemade entree items. If you make terrible potato salad and the deli down the block has awesome potato salad, serve theirs! The most important thing when entertaining is to be able to enjoy the meal and your guests, because that's the part they'll remember the most :)
