Depends on how casual the function is. It's is pretty casual try fruit and veggie trays (just get the ones from the grocery store). A good fruit dip is to get a jar of marshmellow cream and a block of cream cheese (soften) and stir together till mixed. Ranch dips are always good with veggies. A good chip dip is to get one can of chili and a block of cream cheese and heat them together. Stir constantly otherwise it'll burn and use tortilla tips. Cheese and cracker trays are always good. Also try putting out a bowl of olives (variety looks nice). Pickled asparagus (don't knock it till you've tried it) Also shrimp cocktails are good. Hope this helps, of course I'm assuming you have the drinks covered ;)
Hooter's Buffalo Chicken Wings
vegetable oil -- for frying
1/4 cup butter
1/4 cup Crystal Louisiana Hot Sauce
dash ground pepper
dash garlic powder
1/2 cup all-purpose flour
1/4 tsp paprika
1/4 tsp cayenne pepper
1/4 tsp salt
10 chicken wing pieces
ON THE SIDE: bleu cheese dressing and celery sticks
Heat oil in a deep fryer to 375. You want just enough oil to cover the
wings entirely -- an inch or so deep at least.
Combine the butter, hot sauce, ground pepper, and garlic powder in a
small saucepan over low heat. Heat until the butter is melted and
the ingredients are well-blended.
Combine the flour, paprika, cayenne powder, and salt in a small bowl.
If the wings are frozen, be sure to defrost and dry them. Put the wings
in a large bowl and sprinkle the flour mixture over them, coating each
wing evenly. Put the wings in the refrigerator 60-90 minutes.
This will help the breading to stick to the wings when fried.
Put all the wings in the hot oil and fry 10 to 15 minutes or until
some parts of the wings begin to turn dark brown. Remove from the oil
to a paper towel to drain. Don't let them sit too long, because you
want to serve them hot. Quickly put the wings in a large bowl. Add the hot
sauce and stir, coating all of the wings evenly.
Serve with bleu cheese dressing and celery sticks on the side.

"This vegetarian special gets its bite from canned green chiles and hot pepper sauce; cream cheese cools things down."
INGREDIENTS:
1 (8 ounce) package cream
cheese, softened
1 (2 ounce) can chopped black
olives
1 (4 ounce) can diced green
chiles
1 (4 ounce) jar sliced pimento
peppers, drained
2 green onions, minced
3 tablespoons hot pepper
sauce
3 tablespoons chopped fresh
cilantro
10 (10 inch) flour tortillas
DIRECTIONS:
1. In a medium-size mixing bowl, combine cream cheese, olives, chiles, pimentos, green onions, hot sauce and fresh cilantro. Spread the mixture onto tortillas. Roll the tortillas up and refrigerate for at least 1 hour.
2. Slice the roll ups and serve.
Shrimp cocktail with sauce and lemon wedges are the easiest and are not that expensive.
All you need is to find a Costco or go to the frozen section of your market, and get a bag of shrimp at least 2 hours before (day before is good too).
In a huge ceramic bowl or huge platter, add crushed ice, butterleaf lettuce (or thin layer of shredded lettuce) on top of the ice, then add the shrimp. In the middle of the platter add a bowl of cocktail sauce, and garnish the side with lemon wedges.
If you wish to be fancier, you can prepare the shrimp on long toothpicks (mini kabobs) and then people can pick up the shrimp by the stick.
