Although you can spend a lifetime learning everything there is to know about the confectioners' trade, there are plenty of easy to make recipes that will delight your friends and family. All you need to get started are a few common kitchen items, some simple ingredients, and a modicum of know how.
Tools of the Trade
Most of the tools needed to make candy can be found in a well-stocked kitchen. A medium sized saucepan with a heavy bottom and straight sides is a must. It should be large enough to hold 3 to 4 times the volume of the ingredients; this will help prevent boil overs. A bowl, large enough to hold the saucepan, is useful for cooling the candy while it is still in the pan. The temperature of the mixture continues to rise even after it has been removed from the heat. Immersing the pan in cold water for a few moments can prevent the temperature from rising too much, turning your peanut brittle to a nutty caramel sauce. You will need a long-handled, wooden spoon to keep you from burning yourself while cooking. Some recipes will call for brushing down the sides of the pan with water to prevent crystallization. 1/2 cup butter
2 1/4 cups brown sugar
1/2 cup milk
3/4 cup peanut butter
1 teaspoon vanilla extract
3 1/2 cups confectioners' sugar



DIRECTIONS:
Melt butter in a medium saucepan over medium heat. Stir in brown sugar and milk. Bring to a boil and boil for 2 minutes, stirring frequently. Remove from heat. Stir in peanut butter and vanilla. 1 tablespoon vegetable oil



DIRECTIONS:
In a medium saucepan over medium-high heat, combine butter and cream. Bring to a boil, and remove from heat. Stir in 4 ounces chopped chocolate, orange liqueur, and orange zest; continue stirring until smooth. Pour truffle mixture into a shallow bowl or a 9X5 in loaf pan. Chill until firm, about 2 hours.

INGREDIENTS:
3 cups semisweet chocolate chips
1 cup white chocolate chips
1/4 cup butter
3 cups confectioners' sugar
1 cup Irish cream liqueur
1 1/2 cups chopped nuts

1 cup semisweet chocolate chips
1/2 cup white chocolate chips
4 tablespoons Irish cream liqueur
2 tablespoons butter



DIRECTIONS:
Butter a 8x8 inch pan.
In the top half of a double boiler melt the 3 cups semisweet chocolate chips, 1 cup white chocolate chips and 1/4 cup butter until soft enough to stir.
Stir in the confectioner's sugar and Irish cream until mixture is smooth. Stir in nuts. Place mixture in the prepared pan and lay a sheet of plastic wrap over top; press and smooth top down.
In the top half of a double boiler melt remaining chocolates until soft. Remove from heat and with a fork beat in the butter and Irish cream until smooth. Spread topping over cooled fudge with a knife. If a smooth top is important place plastic wrap over the top. Refrigerate until firm, 1 to 2 hours at least. This fudge can be easily frozen.

Butter a 9X13 pan and sprinkle with chopped nuts
In a large saucepan bring to boil 1 cup butter and 1 cup brown sugar. Stir constantly and boil over med high heat for 10 minutes stirring constantly.
Pour over the nuts and spread with a knife
Sprinkle with 1 cup chocolate chips and spread them over the top when they start to melt.

First I buy:
the good cake icing (assorted flavors)
toothpicks
ice tray (cube works best)


OK. fill ice cube tray up with good cake icing (mixing or layering is always fun)
stick toothpick in each one
freeze overnight

sounds weird but is good and little kids love to make it

tip: if u r having trouble getting icing cubes out run warm water over bottom of tray I make "Heath Bars" - very easy

1/4 lb. pecan halves
24 individually wrapped caramels, unwrapped
1 tsp. shortening
1 cup chocolate chips

Heat oven to 300. Cover cookie sheet with foil, shiny side exposed.
Lightly grease foil with vegetable oil spray. Place 3 pecan halves
in a "Y" shape on the foil. Place 1 caramel candy in the center of
each "Y". Bake just until caramel is melted, about 9-10 minutes.
Heat shortening and chocolate chips over low heat just until
chocolate is melted. Spread over candies and refrigerate for 30
minutes.
