Dad's and Mom's Pickled Eggs and Beets
4 can whole beets drained with juices reserved
3 sm onion halved & thinly sliced in half-moons
24 x hard-cooked eggs peeled
1 1/2 cup sugar
reserved beet juice
3 cup apple cider vinegar
3 tbl pickling spice
Method :
Place beets, onion, and peeled eggs in a nonreactive glass or plastic container (My Dad and Mom use an old gigantic pickle jar). Set aside. In a medium-sized nonreactive saucepan, combine sugar, beet juice, vinegar, and pickling spice. Bring to a boil, lower heat and simmer 5 minutes. Immediate pour simmering liquid and spices over beets and eggs. Cool to room temperature and cover with lid. I do not know how long these keep, we eat them up within a days time.

The perfect and easy way is to go to your local grocery store and purchase pickled beets in a jar fro 2 dozen i would say about 10 jars,get 2 gallon size jars split eggs between both add the jars of beets,then when ever you go to the refrigerator shake the jars as so not to have poke-it-dot on your eggs let them set about 24 hours and try one GREAT FLAVOR AND BEAUTIFUL COLOR and no fuss in the kitchen...
Red egg-beet salad
Hard boil the eggs, take out of water, cool and peel, leave the eggs whole. Set aside.
Boil 3 red beets until soft. Cool and peel. Cut into large chunks.
Place eggs and beets into a salad bowl. Add enough mayonaisse to make them stick together and mix gently until the eggs are tinted red. Add salt and pepper to taste.
Optional:
Add all or any - blanched green beans, chopped spring onions, chopped white onions, boiled and diced potatoes, chopped green apples, raisins, chopped walnuts. Serve on a bed of lettuce.
