The carrot is a very versitile vegetable that can be used in many ways, soups, salads, vegetables, cakes, pies muffins and cookies which most of them can be frozen and eaten later.
Par boil your carrots 2 minutes and dip in Ice water to cool. Put in a plastic bag and freeze. When ready to use, thaw and put in a skillet with butter and sprinkle with a little sugar and cook till brown. or Bring to a boil and cook about 5 more minutes and add to white sauce with peas or cauliflower and broccoli.
Make chicken pot pie and freeze it for later. Simply thaw and re heat in a 350 degree oven for about 20-25 minutes
Grate the carrots and freeze them in plastic baggies in ammounts for muffins and cakes or make them first and freeze the cakes.

Trust me, you can sub anything you don't have and the taste will still be fantastic. Well, like don't sub the eggs, baking powder, sour cream. You know sub the spices and such.
2 Eggs
2 Teaspoons Cinnamon
1 Teaspoon Vanilla
1 Cup Sour Cream
1 Stick of butter room temperature
1 Heaping Cup of Sugar
1/2 Teaspoon Salt
2 Cups Flour
1 Teaspoon Baking Soda
1 Teaspoon Baking Powder
1 Cup of finely grated Carrots
1 Cup Pecan Pieces (opt)
1 Can of 8 1/4 oz. Crushed Pineapple drained (opt)
Cream butter salts, sugar and eggs. Add Sour Cream, Vanilla, Cinnamon.
Mix in Flour, add cup of finely grated Carrots, and Nuts.
Bake at 350 Degrees in a loaf pan for 1 Hour and ten minutes or until done.
I use wooden Skewers to test for doneness in Quick Breads.

Separate into 2 batches of 2 pounds & 8 pounds. Wash & peel both batches.
Grate the 2 pound batch and cook on a slow fire for 30 minutes adding 1 tin (250 ml) of condensed milk. Add sugar as per liking. Serve hot. Add Cinnamon for flavouring
Preserve the other batch in vinegar and use as & when required.
I love carrots peeled and sliced into glass casserole, slice up some yellow onion, add butter and salt. Cover and microwave in 4 minutes increments, stirring each time until carrots are tender. Not a specific recipe, just keep dumping.
