My friend gave me this huge bag of pocket pitas, and I'm never going to eat all of these before they get scary and moldy in my fridge. So I was thinking of making them into pita chips. Anyone got any seasoning ideas? I'm thinking of something with sea salt, garlic powder and maybe some herb of some kind... anyone have any ideas or recipies? And how would I get this herb mix to stick to the pita?

I've made these...try brushing the pita breads very lightly with some olive oil or melted butter and sprinkling garlic powder, cinnamon, lemon pepper seasoning, or italian seasoning on them. Bake them in a 375 degree oven for about 15 minutes or so.
Other Answers:
You can always freeze some of them for later on. Just bake them for a few minutes after they defrost to freshen them off.
Otherwise, brush them with some olive oil and sprinkle with salt, pepper, garlic powder, onion powder and a little cayenne pepper. You could add some dried basil too.
To make them sweet, try some melted butter with cinnamon and sugar!
I would freeze some of them for later. I keep mine in the freezer. To make pita chips, I just butter them and toast them. You can add dried parsley, garlic powder, onion powder, crushed red peppers, before toasting in the oven or toaster oven.
Zatar seasoning. Combine toasted sesame seeds, sumac, salt and dried tyme.
Just leave them plain. They will keep longer, and you can use them to dip into hummus, salsa, or a tuscan white bean and garlic dip.
