wash it good under cold water,Soak it in salt water and onions for 1/2 hour, Soak it in a garlic based marinade overnight,then slow cook it in a butter sauce with onions.
in general, a marinade is some liquid that tenderizes meat, so anything with an acid in it is great.
from experience, a good steak marinade is a can of soda, a glass of red wine (red wine -> red meat), or a big squirt of lemon juice. you can add flavors to it: garlic, onions, cayenne or chili powder, barbecue sauce, soy sauce and sugar, .... add water to cover the meat and refrigerate for an hour. you can leave it all day if you want.
remember, this liquid had raw meat in it, so DO NOT serve it!

This will help brown the surface of the meat and give it that nice color when you cook it. Liberally sprinkle salt and pepper on the steak and rub the grains into the meat. Alot works well in a marinade...anything from mixing a little salt/ pepper/ chopped onions/ lemon juice/ fresh minced garlic....to going all out with multiple fresh spices as well as fresh and roasted peppers mixed with a little rice vinegar and olive oil....as well as various other marinade recipes.... my family loves anything with teriaki and soy sauces in it but their favorite is a caribean jerk recipe I actually got from youtunr.coms a few weeks ago myself that includes a little whiskey in the marinade recipe! (if you want that recipe email me) Remember to soak the meat at least 30 minutes.... some people like it marinaded overnight....I know my family loves chicken marinaded overnight in basalmic vinegar then grilled on the bbq...
As far as taking the game taste out of meat....you might want to check with your local butcher for the best way to handle that one....my sister used to soak deer meat in beer overnight and said it took the game taste out...I have also heard that if you use alot of spices the game taste tends to not be as noticable....good luck on this one!
