Answers:
3C water
1 can garbonzo beans
2 peeled garlic cloves
1 bay leaf
3/4t salt
1 t cumin
1 T Tahini (or extra virgin olive oil)
2 T fresh lemon juice
2 T fresh chopped cilantro (optional)
3/4 C choppecd green onion (optional)

Drain the beans and rinse thoroughly (canned bean slime causes gas). Put the beans, bay leaf, 1/2 t salt, and garlic cloves into the water, and bring to a boil. Reduce heat and cook on low 10-15 min. Throw out the bay leaf, but save the garlic and 1/2 C of the cooking liquid. Use a food processor or blender to puree the cooking liquid, garlic, beans, cumin, Tahini, lemon juice, and the remaining 1/4 t salt. Stir in the cilantro and green onions. Salt and pepper to taste.

1/4 cup chopped onion

2 Tbsp. lemon juice

1/2 tsp. minced garlic

1/2 tsp. dried basil leaves

DRAIN beans, reserving 1/4 cup of the liquid.

PLACE beans, reserved 1/4 cup liquid, onion, lemon juice, garlic, basil and hot pepper sauce in food processor or blender container; cover. Process until smooth. Cover. Refrigerate at least 1 hour for flavors to blend.

SERVE as a dip with cracker
