INGREDIENTS:
3 cups all-purpose flour
2 cups white sugar
6 tablespoons unsweetened cocoa powder
2 teaspoons baking soda
2 teaspoons baking powder
2/3 cup vegetable oil
2 cups water
2 tablespoons distilled white vinegar
2 teaspoons vanilla extract
DIRECTIONS:
In a large bowl, combine all the dry ingredients together.
Combine all the wet ingredients together in another bowl.
Pour the liquid ingredients all at once into the dry ingredients, and beat until smooth.
Pour batter into a greased 9 x 13 inch pan.
Bake in a preheated 350 degrees F (175 degrees C) oven for 20-25 minutes. Let cool in pan. When cool sprinkle with confectioners' sugar.

I normally use 2 eggs, and
4 oz flour (self raising, or plain with a rounded teaspoon of baking powder added,)
4 oz sugar, and
4 oz margarine (or butter.)
I just beat the sugar and margarine together until they're fairly creamy and more pale in colour, then add the eggs - one at a time with a tablespoon of flour - and beat them in. Then you just need to stir in the remaining flour with a metal spoon and put it in a cake tin and bake at around 180C ... the time will vary from oven to oven, but start checking it with a cocktail stick after 25 minutes.
If you use 3 eggs to make a bigger cake, use 6 oz of the other ingredients and bake for about 40 minutes before testing with a cocktail stick.
This cake mixture can also be used in cake cases - depending on the size they will take anything from 10 minutes to cook.
If you want to add choc chips, or nuts, that works too.
If you want to make it a chocolate cake, replace 1 third of the flour with cocoa powder.
