Olive oil has a low smoking point and is not recommended for deep frying. If you want make some french fries, try this: Cut up some Russet potatoes into wedges. Spray with olive oil and season with some salt. Preheat oven to 450. Place potatoes on a metal baking pan, cookie sheet will work, and bake until tender. Try preheating the tray before placing the potatoes, this will make for crispier potatoes.

Why not bake them w/ some seasoning on them with a little olive oil? Peanut oil has a high fat content. Try canola.
Well I wouldn't advise you to deep fry anything in Olive oil. Fry maybe, but not deep fry (that takes a lot of oil) and I say this simply b/c olive oil burns fast and the potatoes will soak up a lot of grease...it just wouldn't work!! Try cutting the potatoes and then baking them on a cookie sheet. That would seem to work better or just steam them in a little Olive oil and water. I can just picture a Huge Vat of grease (olive oil that is) burning up and smoking up the house (smoke alarms going off)....lol and the whole thing being a big mess on top of wasting (that's not he cheapest oil)!!! yes you can...its one of the best you can but olive oil tends to smoke really bad. they suggest a good veggie oil
