Here are some friends with simlar question as we.And I have this question for many days, anyone help us?
Kitty said: Yes.Is margarine a good substitute for vegetable oil when baking?-I try seach this on internet but no results found.Maybe this is a stupid question.
Mike said: oh,no,you are wrong.I have found as below for this question(Is margarine a good substitute for vegetable oil when baking?),it will help you,my kids.
I have been baking a lot and I don't like the idea of putting vegetable oil into the batter even if the recipe demands for it. I always substitute melted margarine. Does it make any difference? Would it be healthier in the long run or not? Please advise.
Answers:
no it will give the food a different texture because it breaks down and cooks differently. Haven't they been finding that margarine is not that good for you, using pure vegetable oils can actually be healthier.
Other Answers:
Vegetable shortening would probably be a better substitute.

no... it makes making have a different texture and may mess up your baked good... Vegetable oil is better for you, but if your going to substitute anything butter would be better than margarine, at least it'll taste better and no trans-fat.
what mrjwm said.
It can make a difference in some recipes, but I don't think that it would be any healthier at all. Have you considered using canola or sunflower oil instead?no....it will cause things to dry out. one is a liquid the other is a paste at room temp. Try using applesauce instead of the oil. I use it in cakes and cupcakes a lot and I can't even taste it. It doesn't mess up the texture of the cake either.
