    Looking for recipes for couscous. Love it but have no idea how to prepare it.?

Southwestern Couscous

1 cup vegetable broth
1/4 cup sliced green onion
1 - 4 oz. can diced green chili peppers
1/4 tsp. ground turmeric
1/8 tsp. pepper
2/3 cup couscous
In a small saucepan, combine broth, green onion, undrained chilies, turmeric, and pepper. Bring to boiling; remove from heat. Stir in couscous. Let stand, covered for 5 minutes. Fluff with fork before serving. Makes 4 servings.

Couscous is extremely easy to prepare. Just about all grocery stores carry the larger containers now. Follow the directions on your package, but typically it's 1 cup of water to 1/2 to 2/3 cups of couscous. You don't boil couscous like you do rice or pasta. It's more like making instant stuffing. You boil the water, add couscous, then remove it from the heat and cover for 5 minutes. The couscous will puff up then you fluff it with a fork and it's ready.

You can add all manner of things to couscous. Whatever cuisine you're having for the rest of your dinner can be matched with the couscous. Spicy, sweet, savory... We like olive oil, pine nuts and garlic in ours as a matter of course, but we've added all different kinds of herbs and spices. Whatever you like!

Equal parts liquid and couscous, boil the liquid, remove it from the heat pour in the cous cous and wait 10 minutes. Done Easiest stuff in the world to cook.
I prefer mine cooked in chicken stock.
So 2 cups chicken stock, 2 cups couscous. Cook and fluff with a fork, let stand in bowl extra 10 minutes.
Add 1 pack cherry tomatoes cut in half, 3tbsp fresh chopped parsley, 2 cloves minced garlic, 1 bundle green onion finely chopped,1 whole diced english cucumber, 1/4 cup olive oil and 3 tbsp lemon juice. Chill in fridge .Makes a great salad.

Couscous should be light and fluffy, not gummy. Be sure to allow the couscous to absorb the water.
