It just means make a dip in the middle to pour the wet ingredients into, so I usually take my egg and push it (before you crack it this is) into the centre and move it about in a circle to make a dip or well or depression in the middle of the dry ingredients, you don%26#039;t even have to do it, it just stops the wet stuff sticking to the sides of the bowl before you mix them into the dry ingredients. easy peasy!

Silly, it%26#039;s not rocket science. The others are correct. By making a well, your wet ingredients wont stick to the sides as much. Mainly in making pasta and breads, but it isn%26#039;t necessary to do this. Just have a rubber scraper ready.
