Clabber is what happens to milk protein when exposed to acid (lemon juice, vinegar, etc.) or heat. Clabbered milk = buttermilk. The milk protein curdles and has a more sour flavor. I don't care to drink it straight, but many do w/ a piece of cornbread in one hand and a cold glass of buttermilk in another. Buttermilk also gives a great and unmistakable flavor when used as the liquid in pancakes, biscuits, waffles, muffins, etc.
If you need buttermilk for a recipe (or "clabbered milk") just stir in a tsp or so of lemon juice into the milk and let it sit on the counter 10-15 minutes. Check the consistency before using and you will see it has clabbered.
