When I melt chocolate, I usually add a little Crisco shortening to thin it enough to dip things into (pretzels, etc.) Cream works too, but not milk unless its whole as skim is too watery and seizes it. Butter seems to thicken the chocolate and make fudge.
What would regular veggie oil (canola or whatever) do when melting chocolate? It seems to me like it would not mix in well, but I cannot be sure as I have never tried it....

After melting your chocolate for dipping, adding a litle veggie oil(1 teaspoon at a time) will not harm your chocolate. If you add the oil before melting, it could become hard or grainy.

I have used it many times and I have never had a problem!

Oil will work fine, this is what you add to chocolate to use in chocolate fountains. You need to melt the chocolate and then add the oil to it.
