Okay, will do, Moon. I'm not the greatest cook but I've been entirely self-sufficient since I was a young teenager so I know what I'm doing in the kitchen. Anyway, sandwiches are easy. It's just a matter of personal preference and taste.

The old standard, surefire, can't-miss sandwich is of course grilled cheese. You can make it with white bread, as most seem to do, but I prefer it on rye (I love rye bread, especially when toasted). All you need to do is butter one side of each slice of bread, placing it buttered side down in the pan, pile on your cheese (American, Cheddar, Cheshire, Swiss, Monterey Jack, a combination, whatever you prefer) and -- this is the critical part -- slice up and dice a good bit of onion (red, yellow or white, according to taste). Grilled cheese without onions is an invention of the Prince of Darkness and I'll not have it in the house! Cheese and Onions were made for each other (just ask The Rutles, lol) and any self-respecting grilled cheese sandwich maker knows this from birth.

A summertime favourite is the homemade "sub" or submarine sandwich. For this you can completely vary the ingredients, again, according to taste. But certain elements absolutely must be present: Fresh Sub or Hoagie rolls (and I did say fresh!); a nice assortment of Cheeses (I do love le fromage!) which MUST include Provolone; Oil & Vinegar salad dressing (I use Newman's Own for this purpose and it is magnificent!); fresh, crisp Iceberg Lettuce (yes, I know Romaine is healthier but it dominates the palate too much in a sub); Dill Pickles, sliced thin (Vlasic Sandwich Stackers do the trick nicely) and anything else is optional. Yeah, yeah, I know the tomato crowd will scream blue murder at its omission from the "essentials" list but I'm not a big fan of tomatoes and I hate how they make the roll all soggy and such like. Meat lovers are crying too, I imagine, but I've enjoyed many a sub bereft of dead animal flesh. Mind you, a turkey/swiss sub is heavenly and donna be disputed! (Robbie Burns reference... erm, kinda.) Seriously, don't get too caught up in the cold cuts thing as so much of that lunchmeat is unhealthy (ham, bologna, salami, pastrami and the like). I'll add the turkey on occasion but I steer clear of the rest now. Oh, and yes, onions work on a sub just as on virtually anything else involving cheese. :)

My last favourite sandwich would be the simplest: Tuna. I prefer white Albacore packed in water, drained and mixed with Miracle Whip ("salad cream" for our British friends). Rye is definitely the bread of choice, again, though white works perfectly well. A nice bed of crisp Iceberg Lettuce should be placed on top of the tuna and voila! Oh, and you can eat this either cold or toasted. Both work and I tend to make the determination based on the time of year.

On to your follow-up questions... I've been eating all of these sandwiches, in one form or other, since I was a child. Mind you, back then I was more inclined to eat peanut butter and jelly. Yum! :) I learned of the critical importance of "cheese & onions" from my British father, so I'll credit him on the grilled cheese. My older brother Al tutored me in the fine art of sub making back when I was still in grade school, so I'll give him the nod there. And I guess my Mum likely taught me the tuna sandwich bit. All of these were learned at home, not a flipping culinary school (lol).

I do try to vary some of the ingredients, even bread types, though the system is pretty tried and true. Mind you, variety is the spice of life, which is partly why I turned Japanese (I really think so!*) when I went to live and work there... Beverages vary but I do like Snapple peach iced tea, fresh lemonade, fresh limeade, and other natural drinks as a rule. Mind you, a cold beer goes nicely with a sub on a hot summer's day. All that "slaving away in the kitchen" deserves a reward, no? Cheers, Moon! ;)

Baked Monte Cristo Sandwich

Prep Time: 10 min
Total Time: 21 min
Makes: 4 servings

8 slices 100% whole wheat bread
4 KRAFT 2% Milk Singles
24 slices OSCAR MAYER Shaved Smoked Ham
2 egg whites
1/2 cup fat free milk



PREHEAT oven to 450°F. Top 4 of the bread slices with 2% Milk Singles, ham and remaining bread slices.
BEAT egg whites and milk in shallow dish or pie plate. Dip each sandwich into egg mixture, turning to coat both sides (let bread soak about 5 sec. on each side). Place sandwiches on baking sheet sprayed with cooking spray.
BAKE 6 min.; turn. Bake an additional 5 min. or until sandwiches are golden brown. Cut sandwiches diagonally in half.

Gourmet Mozzarella and Tomato Sandwiches

Prep Time: 10 min
Total Time: 10 min
Makes: 4 servings, one sandwich each


4 sandwich rolls (3 oz. each), split
1 pkg. (8 oz.) POLLY-O Gourmet Mozzarella Cheese, cut into 12 slices
1 jar (7 oz.) roasted red peppers, drained
1 large tomato, cut into 8 slices
12 large fresh basil leaves
1/2 cup KRAFT Italian Dressing

COVER bottom halves of rolls evenly with cheese, peppers, tomatoes and basil.
DRIZZLE evenly with dressing.
COVER with tops of rolls.


VELVEETA? Sweet & Cheesy Panini

Prep Time: 10 min
Total Time: 16 min
Makes: 4 servings

8 slices bread
1/4 lb. (4 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut into 8 slices
24 slices OSCAR MAYER Shaved Brown Sugar Ham
1 medium Granny Smith apple, thinly sliced
8 tsp. margarine, softened
2 tsp. powdered sugar

COVER each of 4 of the bread slices with 2 slices of VELVEETA, 6 ham slices and 1/4 of the apples. Top with remaining bread slices.
SPREAD outsides of sandwiches evenly with margarine.
COOK in skillet on medium heat for 3 minutes on each side or until VELVEETA is melted and sandwiches are golden brown on both sides. Place on serving plates; sprinkle lightly with powdered sugar.

My favorite sandwich is New Yorker White American cheese on white bread, nothing else. I eat it with olives on the side and I drink Tang. Sometimes I'll do colby instead. Didn't really have to learn it, it's just cheese and bread. I also like grilled cheese with chocolate milk and vegetable soup. Also I love pepperoni and cheese but it's so bad for you that I try not to eat it. I don't really like mayo, mustard or ketchup. mix and match with these ingredients:

toasted bread
lettuce
tomato
onion
pickles
cucumber
bacon
ham
tuna flakes
mayo/ garlic mayo
catsup
yellow mustard
harboiled eggs/or egg salad
bell peppers
spinach
watercress
smoked salmon slices
crabsticks
mushrooms
and cheese!!!

5. roast beef and monterey jack cheese on a lightly toasted bagel with either mayo, spicy mustard or horseradish sauce or all three. Well, although I try to eat healthy food most of the time, my favorite sandwich during the summertime, is bacon, tomato, and natural peanut butter, on toasted whole wheat bread!!! Yes, I know that the peanut butter will sound completely strange here, but it's really delicious!!! I grew up eating these, and have always loved them. :) The boring, bacon, lettuce, and tomato sandwich, just won't do, lol. I'm not a big fan of tomatoes, but I love eating them this way!

My second favorite sandwich would have to be a reuben! This is a bit more trouble to make, but it's very much worth it!! Just grab a couple slices of buttered rye bread, add some corn beef, sauerkraut, swiss cheese, and thousand island dressing, and toast it all together!!! Yummy!!!

Lastly, I have been making quite a few "sandwiches" out of whole wheat flour tortillas lately. I just use the tortilla like bread, but roll the finished product into a wrap. Just add shredded chicken, onion, shredded cheese, lettuce, and whatever else sounds good to you, then a bt of mayonnaise or whatever sauce that you prefer and roll it all into a wrap and enjoy! I will sometimes add bean or broccoli sprouts to this as well, which makes it even more yummy! :)

Although I've eaten all of the above many, many times throughout the years, I do still love trying new and unusual things!!

My beverage of choice, is usually home-brewed iced tea, unsweetened, or fresh squeezed lemonade or limeade, especially this time of year! :)
