I'm packing a picnic lunch for my family for mothers day and was wondering if anyone had any good recipes that would be easy to make and would keep well. I'm looking for something a little more unique and just a little more upscale then peanut butter or tuna fish. Any ideas would be great. Thanks

6. asst. cheese tray with pickles and olives
7. pork tenderloin sandwiches
8. sliced beef tenderloin for sandwiches

10. have mayo, mustard, spicy mustard, miracle whip, and creamy horseradish sauce (the horseradish sauce would be for the beef tenderloin)
11. a good bread for sandwiches like hoagie's, french bread, etc.
12. shrimp with cocktail sauce (don't forget the sliced lemon)
13. cole slaw
14. stuffed celery sticks using pimento cheese, chicken salad, or blue cheese dressing/Gorgonzola cheese mixture
15. sliced tomato's, sliced onions, sweet pickles, dill pickles, and lettuce
16. assorted cookie tray
17. sliced cake tray
18. make homemade ice cream with a ice cream maker
19. take plastic ware, solo cups, napkins, blankets, and top quality paper plates
20. games to play, Frisbee's throw, woofle ball and bat to play a family ballgame, football for touch football,etc.

Consider taking a Hibachi and making ShishKabobs of some sort. Usually, fairly quick and fun to make. Can be skewered ahead of time or while you wait for the charcoal to get going. You can then get as "upscale" as you want.

Do a search for spanish tapas! Or you could go greek with dolmas, olives, cheese, hummus and pita. Have fun! Make some cold cut sandwiches, with lettuce, tomato, cheese, and mayo or mustard or combo of both, cake, a bottle of wine, chips, and make a dessert such as cake or something else. Or buy a small grill and make something right there and still bring the wine and have a nice warm fire for the early evening hours.
