OLD FASHIONED PINEAPPLE UPSIDE DOWN CAKE


3 cn 8 1/2 oz size sliced pine-
Apple in heavy syrup (12)
1/4 c Butter
2/3 c Light brown sugar, packed
1 c Unsifted flour
1/3 c Pecan or walnut halves
3/4 c Sugar
1 1/2 ts Salt
1/4 c Shortening
1/2 c Milk
1 Egg
1 c Heavy cream, chilled

Preheat oven to 350F. Drain the pineapple slices, reserving 2 T
syrup. In a heavy cast iron frying pan (10"), melt the butter over medium heat. Add brown sugar, stirring until the sugar is melted.
Remove from heat, and arrange 8 of the pineapple slices on the sugar
mixture, overlapping the slices slightly around the edge of the pan.
Put one slice in the center. Place the walnut or pecan halves in the
center of each slice of pineapple. Arrange around the inside edge of
the skillet the remaining pineapple, cut in halves. Put pecans or
walnuts in the center.

In a medium bowl, mix the flour, sugar, baking powder, and salt.Add
shortening and milk. Beat 2 minutes at high speed or until mixture is
smooth.Add egg and reserved 2 T of syrup. Beat 2 minutes longer.
Gently pour cake batter over pineapple in skillet. Spread evenly
being careful not to disarrange the pineapple.

Place on center rack of oven and bake 40-45 minutes, or until cake
springs back to light touch. After the cake is done, let the skillet
stand on a wire rack 5 minutes to cool just slightly, and then loosen
edges with a small spatula. Place serving platter over the cake, and
turn upside down. Shake gently, and lift off skillet.

Serve with 1 cup heavy cream whipped.

PINEAPPLE UPSIDE DOWN CAKE

2/3 cup butter
3/4 cup brown sugar

Place the butter and brown sugar in a frying pan and melt until it boils or bubbles. A cast iron pan works well because it's heavy and will be less likely to scorch.

1 can pineapple slices
maraschino cherries (enough to fill centers of pineapples)

Place pineapples in the butter and sugar mixture. Put cherries in the center of the pineapple. Cut the slices of pineapple into halves and line the sides of the frying pan with them (standing up on edge).
Prepare a box of yellow cake mix following the directions on the box to mix the batter (do not bake in a separate pan; follow instructions below).

Pour the batter over the pineapple and cherries.

Bake at 350°F degrees. When the cake is done, loosen the edges with a butter knife. Remove from heat and allow to sit five minutes, then turn it upside down on a serving dish.

Optional: Instead of using a cake mix, you can prepare the batter from scratch using the recipe below, or any recipe for yellow cake.


Scratch Cake:

1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
2/3 cup sugar
1/4 cup milk

Combine ingredients and beat 1 minute. Pour batter over pineapples and cherries (same as above). Bake at 350°F and follow same steps as above.
In two round cake pans,melt butter,add brown sugar,crushed pineapple,make a yellow cake mix,pour evenly between the two pans,bake until golden brown.

1/2 ripe medium pineapple, peeled, cored, eyes removed and sliced into 1/2-inch rounds (about 4 or 5 slices)

1 cup all-purpose flour
1 teaspoon baking powder

1 cup granulated sugar
2 eggs
1 cup buttermilk
1 1/2 teaspoons vanilla extract
1 tablespoon dark rum
4 fresh cherries, halved and pits removed

Melt 4 tablespoons of the butter in a 10-inch cast iron skillet, over medium heat. Add the brown sugar and stir to combine. Increase the heat to medium high and cook until the sugar mixture is bubbly, about 2 minutes. Arrange pineapple slices in the skillet in a pleasing pattern and continue to cook for 2 minutes, or until the sugar mixture turns an amber color. Turn the pineapple slices over and remove the pan from the heat. (The mixture will continue to cook even though the heat is off.) Arrange the pecan halves in the spaces between the rings. Set aside to cool slightly.
Preheat the oven to 375 degrees F.

Stir together the flours, baking powder, baking soda, and salt in a medium mixing bowl.

In the bowl of an electric mixer, cream together the remaining 1/2 cup butter and the granulated sugar until light and fluffy. Add the eggs, 1 at a time, mixing just until incorporated. Add the flour mixture and buttermilk alternately in 3 batches, mixing at low speed after each addition until just combined. Stir in the vanilla and rum.

Spoon the batter evenly over the pineapple slices in the skillet. Bake in the middle of the oven until golden brown and a tester comes out clean, 35 to 40 minutes.

Cool the cake in the skillet on a wire rack for 4 minutes only. Run a thin knife around the edge of the cake and, wearing oven mitts and working quickly, invert the cake onto a cake plate, keeping plate and skillet firmly pressed together. Carefully lift the skillet off cake and replace any fruit stuck to the bottom of the skillet, if necessary. Arrange the fresh cherry halves, cut side down, into the top of the cake, in the center of the pineapple rings.

Serve cake warm or at room temperature
