I have made both of these, and they are each easy and delicious.

The shrimp po’ boy might be a little too informal for dinner with your parents, but you could serve up the 4 minute spicy garlic shrimp over a bed of pasta or a nice salad.

Red Lobster makes the best coconut shrimp. The best part of this dish is the delightful Pina Colada sauce that goes with it.

Ingredients:
1/2 lb.Large Shrimp (butterfly the shrimp)
1 C. Sweetened Coconut Fakes
1 C. Plain Bread Crumbs
1/4 C. Corn Starch (mix with coconut and bread crumbs)
1/2 C. Pina Colada Mix
3 Tbs. Captain Morgan Spiced Rum
1 Tbs. Powder Sugar
1/2 C. Corn Starch
Vegetable for deep frying



Preparation:
Mix bread crumbs, 1/4 cup cornstarch, and coconut in a deep bowl and set aside. Combine Pina Colada mix,powder sugar and Rum in a small mixing bowl and set aside. Place 1/2 cup corn starch in a separate bowl. Heat oil for deep frying. Oil is ready for frying shrimp with it reaches 375 degrees. Coat shrimp first in corn starch, then into the Pina Colada mix, then dust shrimp in bread crumbs, coconut mixture. Second coating place back into Pina Colada mix, then again into coconut, and then the bread crumb mixture. Place prepared shrimp carefully into hot oil. Fry until golden brown, remove from fryer and drain.

Ingredients
2 tbps honey
3 cloves garlic, pounded finely
2 shallots, pounded finely
2 tbsps chilli flakes (roasted dried chillies crushed in a grinder)
2 tbsps MAGGI? Concentrated Chicken Stock
Pinch of salt
750g shelled and de-veined medium-sized prawns
3 tablespoons minced fresh cilantro
Wooden skewers (soaked for at least an hour in water)

Method
In a large bowl, combine the garlic, shallots, honey, chilli, MAGGI? Concentrated Chicken Stock and salt. Add prawns and toss to coat. Cover and marinate at room temperature for 20 minutes or in the refrigerator for one hour. Remove from the marinade and discard any remaining marinade.

Thread the shrimp through the tail and head with the wooden skewers (2 or 3 per skewer).

Grill for 2 to 4 minutes, turning once halfway through grilling time. Arrange skewers on a serving dish and sprinkle with cilantro. alright...so..you take olive oil and butter (you want it to have a cover the bottom of the pan...and melt it in the pan. Have it on a nice high heat and sear the shrimp on both sides (about 30 sec-45 sec a side). Add in about a cup of white wine (I don't know what size of pan you would use, but at least a 1/2 cup), capers, garlic, red pepper flakes (if you want to add some kick to it), black and/or Greek olives, salt and pepper and fresh parsley to the pan and cover. Let it simmer for about 10 min...so that the alcohol can evaporate and all the flavours can come together.
You have a choice, you can make the sauce thicker by adding a mixture of flour and cold water to the pan...or leave it as is..that is your preference, I like both ways. I like to cook angel hair pasta and mix it all together, but it is great if you have the shrimp mix on top too.
Have Parmesan cheese ready to put on top. Serve with salad and garlic bread.

:) Here's a quick and simple one. Deshell and devine your raw shrimp, at the same time butterfly them. Chop up some garlic to a fine consistency, or buy the one thats in a tube. get some lemon juice and set it aside. Chop up some chives or green onion as garnish and flavor, set aside. Get some crushed red pepper and set aside. Set aside some salt. Set aside some white wine. Any particular brand will work. Take some sesame oil and add just a tiny amount to a very hot pan, be quick in the next couple of steps because the high heat will cause the oil to smoke. Add your shrimp and sear them on both sides. Add your garlic after a few seconds deglaze the pan with 1/4 C of white wine, depending on the amount of shrimp. let the wine reduce down and season shrimp with some salt. Remove from pan and toss with some lemon juice. Sprinkle in the chives and check for taste. Cooking time should take no more than 5 min-7 min. I did not put quantities because it will vary depending on the amount.
