I am looking for something not too complicated.
Answers:
This is easy and quick. Use equal parts beer and flour (with a pinch of salt). Let set for at least 1/2 hour. Dip rings of onion and deep fry. This is not only the best you will ever taste, but they will also stay crispy, even after they have cooled.

call your local pizza joint.. its probably cheaper in the end too
Slice up the onions.
Dip them into a mixture of 1 cup of flour, 1 cup milk, and one egg and a little oil (make sure the mixture is mixed well, with no lumps). Then drop the batter-covered onions into boiling oil. Fry until crispy.
Try this - you can make a batter with half a cup of flour to one cup of corn meal. season this mixture with McCormick chicken seasoning, Garlic, and Lemon pepper ( feel free to change these spices to the ones that suit your taste). Peel and cut your onions round and seperate your rings.
Place a half cup of vegetable oil in a skillet on medium heat - when you place a drop of water in the pan and it pops your oil will be ready to use.
dip your rings in the cornmeal mixture and then place them im the hot oil one at a time so they are not touching .
when the edges are golden brown it is time to turn them try to turn them only once so brown them evenly.
Remove them from the skillet and drain them on paper towels inside foil fo that you can absorb some of the oil before serving - the foil is to keep them warm.
Good luck '>) Aunt Jamaima's pancake mix (the kind where you just add water), and make it thick and then dip your cut onions into the batter, then deep fry :) yumm
(very easy and simple)
