Belgian Waffles

4 eggs, separated
2 tablespoons granulated sugar
1/2 teaspoon salt
1 cup milk
1/2 teaspoon vanilla or almond extract
4 tablespoons butter, melted and cooled
1 cup all-purpose flour
Melted butter
Powdered sugar
Sweetened whipped cream (optional)
Strawberries, whole or sliced (optional)

In a medium bowl, beat egg whites just until stiff, moist peaks form; set aside.

In a large bowl, combine egg yolks, granulated sugar, and salt. Beat yolk mixture until thick; blend in milk, vanilla, and the 4 tablespoons butter. Continue beating while gradually adding flour; blend well. Gently fold in beaten eggs.

Cook in waffle iron according to manufacturer's instructions. Let cool slightly and dust with powdered sugar; top with whipped cream and strawberries.

1 c. plus 2 tbsp. self-rising flour
3 tbsp. sugar
1 c. milk
2 eggs, separated
1/2 c. melted butter
1 tsp. vanilla

Mix flour and sugar. Add a little milk and mix well. Combine egg yolks with the remaining milk and mix until smooth. Add melted butter. Beat egg whites until peaks form. Fold gently into batter. Add vanilla and stir. Pour from a cup or pitcher onto hot waffle iron. Bake 5 minutes or until it stops steaming. Remove waffles carefully.
Serving Suggestions: Plain with butter and/or powdered sugar. With whipped cream and sliced fresh fruit or canned fruit.

Ingredients:

2 cups flour
2 teaspoons baking powder
3/4 teaspoon salt
3 egg yolks, beaten
1 3/4 cup milk
1/3 cup vegetable oil
3 egg whites, stiffly beaten
Directions:

Preheat waffle iron. Mix flour, baking powder, and salt. Blend in separate bowl the egg yolks and milk and stir into dry ingredients. Stir in oil. Carefully fold in egg whites. Do not overmix. Pour about 7/8 c. batter into grid of preheated waffle iron. Close and bake about 4 minutes. Serve hot with syrup or butter. Can use as a base for various cream dishes, or topped with ice-cream as a dessert.

Variations: Pecan Waffles: stir into plain waffle bbatter before folding in the beaten egg whites: 3/4 cup chopped pecans or sprinkle a few chopped pecans over batter before closing waffle iron.

Cinnamon Waffles: Sift 1 1/2 tsp. ground cinnamon with dry ingredients when preparing plain waffle batter.

Apple waffles: stir into plain waffle batter before folding beaten eggs: 2 cup peeled and diced apples.

Bacon Waffles: stir into plain waffle batter before folding in beaten egg whites 8 slices pan-fried crumbled and drained bacon.

Corn Waffles: Reduce milk to 1 cup and addd 2 cup canned cream-style corn and 1 to 2 Tbsp. sugar, depending on sweetness of corn Bake until thoroughly dry.

Cheese Waffles: stir into plain waffle batter before folding in the egg whites 1 cup grated Process cheese.

Ham Waffles: sprinkle 2 Tbsp. finely diced cooked ham over batter before closing waffle iron.

Classic Belgian Waffles
2 cups cake flour
2 teaspoons baking powder
1/2 teaspoon salt
4 large eggs, separated
2 tablespoons sugar
1/2 teaspoon vanilla extract
4 tablespoons unsalted butter, melted
2 cups milk
non-stick cooking spray

Preheat the waffle iron according to the manufacturer's instructions. In 1 medium bowl sift together flour, baking powder, and salt. Set aside. In a second bowl use the wooden spoon to beat together the egg yolks and sugar until sugar is completely dissolved and eggs have turned a pale yellow. Add the vanilla extract, melted butter, and milk to the eggs and whisk to combine. Combine the egg-milk mixture with the flour mixture and whisk just until blended. Do not over mix. In third bowl, beat the egg whites with an electric mixer until soft peaks form, about 1 minute. Using the rubber spatula, gently fold the egg whites into the waffle batter. Do not overmix! Coat the waffle iron with non-stick cooking spray and pour enough batter in iron to just cover waffle grid. Close and cook as per manufacturer's instructions until golden brown, about 2 to 3 minutes. Serve immediately.
