Sour cream is NOT sour because it is bad. It is the culture init that makes it a sour cream. Dairy product will always have a used by date. Dairy rpoduct is notorius for going off quickly.
crouton is NOT stale bread. And moisture will make it go soft and any moisture will encourage mol and I am sure you don't want to eat that!.,
