Take 2 boneless, skinless chicken breasts, thawed.
Pound them flat with a mallet (a real cooking mallet, not any hammer).
Layer on each of them one piece of ham, one piece of swiss cheese, and one slice (about 1/4 inch) from a brick of cream cheese (or just spread some on).
Wrap the chicken around the ham and cheeses, turn over (so the flap is down), and insert a toothpick to hold it all together.
Bake on a pan at 350 degrees for 25-30 minutes.

This is a cheap way of having Chicken cordon Bleu.

Serve with green beans or peas, and stovetop stuffing.

and you could make spaghetti.

spaghetti noodles
tomatoe/spaghetti sauce (your preference on brand/flavor)
large pot filled with water
colander (spelling?)
pot for sauce
stove
plates

cook noodles according to instructions on box. while noodles are cooking warm the sauce in a pan on the stove. when the noodles are done drain them in a colander.
put the noodles on the plates and top spaghetti sauce. if you want you could have purchased frozen garlic bread and heated that in the oven according to the directions while everything was cooking.

eat with wine for a romantic dinner or with soda or milk for casual lunch/dinner.
EASY CHICKEN FAJITAS

boneless chicken breast
1 1/2 c. water or chicken broth
1 pkg. taco seasoning
2 chopped bell peppers (red, green, or yellow)

Cut chicken breast into strips. Simmer strips in water or broth until just about done.
Place in skillet along with 1 cup cooking water or broth, taco seasoning, and chopped bell peppers.

Simmer until chicken is done and sauce becomes thick. Add remaining water or broth (1/2 c.) and simmer 10 minutes.

Ready to eat!

Recommended Toppings: Lettuce, Tomato, Refried Beans, Sour Cream, Taco

Sauce Note: Tastes like Taco Bell.

Ramen! Also you can make panini on a Foreman grill, just make a sandwich (must have cheese so it can melt) and put it on the grill until it's toasty with the cheese melted. You will get a lot of hot sandwiches (at least a few meals) for very little money.
