Only for a very short time. It can be dangerous to keep garlic in oil because of the risk of botulism (fatal food poisoning). Be sure to store it in your refrigerator, never at room temperature.

As long as it is in an air-tight container, indefinitely! When exposed to air, the oil on top will still keep out
air-borne contaminates. Try to keep open containers in the refrigerator. I have had open containers for over a year. As long as the container itself does not deteriorate. Use Glass or any other type of container that will not rust or rot (metal tops on glass will rust). If you use store bought, the date on the container is only the last sale date by law. It will not go bad at midnight on that date! If you make your own, Mason canning jars with an intact rubber seal work great! BON APPITITE!
