Try this. It is one of my favorites.
Low Fat White Chili
1-Can Chicken Broth
1-Can Rotel Tomatoes
4-Cans Great Northern Beans
2-Cans Diced Tomatoes w/ onion & garlic
1-Tsp Cumin
1-Tsp minced garlic or two cloves fresh minced
?-Tsp Black Pepper
1-Med Onion – Diced
3-Boneless Skinless Chicken Breasts
Place everything except chicken and onion in crock pot. Set on low (250). Spray skillet with Pam and sauté onion until transparent. Put onion in crock pot and sauté chicken until lightly browned on each side. Let cool a few minutes, then cut chicken into ? inch cubes and add to crock pot. Continue cooking on low (250) six hours. Longer is even better as the flavor blends with additional cooking.

I take a whole chicken, one stick of butter, salt, garlic powder, onion powder and a jar of Bar-be-que sauce. I put them all in the crock pot on low and cook all day. The chicken falls of the bone.
My favorite is to take a 2-3lb boneless Boston Butt Pork Roast, add about a cup of cider vinegar and cook on low for 8 hours. When it is done, you can shred the meat in the crock pot and discard as much fat as you want. Also, discard the liquid. Then add a bottle of your favorite barbecue sauce. Mix it all up and serve on rolls with coleslaw and baked beans! It is great pulled pork barbecue, SO EASY and delicious!! Only three ingredients!!
Put a whole bird, or a mixture of chicken parts in the pot and fill half way with water. Slow cook on high till the meat falls off the bone.
Scoop out the chicken with a slotted spoon. Let cool while doing the following.
Into the broth, put black pepper, chopped garlic, chopped onion, chopped celery. Then add grated broccoli, carrots, and red cabbage.
Debone the chicken, and place back into the pot. Cook slow for another hour or so. Correct with seasoning.
This whole process probably won't require more and 4-6 hours.
This soup will go so well with so many other side dishes -- rice, potatoes, pasta, corn on the cob, corn bread, Italian bread, on and on and on.
I usually make a really HUGE batch, portion it out into single serving plastic containers. I take one to work for lunch each day. Mmmm mmmmmm GOOD!
