Fried Eel and potato sandwich

Eels
Eggs
Salt
Bread
Flour
Butter

Skin and clean the eels carefully, cut into 3-inch pieces, sprinkle with salt and leave for an hour.

Rinse and dry thoroughly, dip in beaten egg, roll in bread crumbs and fry in plenty of butter. Serve with the browned butter and creamed potatoes.

CREAMED POTAYOES: Melt a tablespoonful of butter, add 1 1/2 tablespoons flour and a little milk. Stir over a low flame until thickened; season with salt and a little sugar.

Cut boiled potatoes in small pieces and add to this sauce. Serve garnished with chopped parsley and butter.

mexican lasanga
10 tortilla shells flour shells
1 can tomato sauce
1 cup salso
12 ounces cottage cheese lowfat
1 cup cheese shredded lowfat
1 egg
you can add a half pound beef or chicken.
Layer greased 13x9 pan with 5 tortilla shells layered.
Cook meat and add the tomato sauce and salsa and mix together. In seperate bowl mix cottage cheese and 1 egg
Layer tortillas in pan with half of the meat mixture.
ON top of meat layer all of the cheese mixture. Place 5 tortilla shells over cheese mixture. Add rest of meat mixture and top with shredded cheese. Bake at 375 for 30 minutes. Let sit for 5 minutes after cooking.

You can put it in the fridge and stays pretty good for a few days.
