Chicken and Chips

Total Preparation Time : less than 15 minutes
Actual Cooking Time: 15 to 30 minutes
Number of Servings: 6

Ingredients
1 can Cream of chicken soup
8 oz. Sour cream
2 t. Taco sauce
1 Small can chopped green chilies
3 cups Cubed cooked chicken
12 slices American cheese
4 cups Broken tortilla chips


Preparation
In a bowl, combine the soup, sour cream, taco sauce, and chilies. In an ungreased shallow 2-quart baking dish, layer half the chicken, soup mixture, cheese, and tortilla chips. Repeat layers. Bake, uncovered, at 350 for 25-30 minutes or until bubbly.
It's just chicken wings and french fries or onion rings.

Chicken & Chips

Ingredients

1/3 c milk
1 egg
1 1/4 c sour cream & onion potato
-chips; finely crushed
1/4 ts onion powder
1/4 ts pepper
1 1/2 lb boneless skinless chicken
-breasts; cut into 1 pieces
2 tb butter or margarine; melted

Instructions

Preheat oven to 400 degrees. In a small bowl beat together the milk and egg with a fork until well mixed. In a shallow dish, combine the crushed potato chips, onion powder and pepper. Dip chicken pieces into the egg mixture, then roll them in the crushed chips. Arrange coated pieces in a single layer in a baking pan that has been coated with vegetable spray. Let sit at room temperature for a few minutes, then drizzle with melted butter and bake for 10 to 20 minutes until firm and golden brown. Serve with Ranch Dressing as a dipping sauce.

Chicken 'N Chips Bake

2 c. cooked chicken cubed
2 c. celery, sliced
1/2 tsp. salt
1/2 c. slivered blanched almonds, toasted
1/2 tsp. monosodium glutamate
2 tsp. grated onion
2 tbsp. lemon juice
1 c. mayonnaise or salad dressing

Combine the above ingredients. Pile lightly in 8 x 1 1/2 round baking dish. Sprinkle with 1/2 cup crushed potato chips. Bake in hot oven, 425 degrees, 15 minutes or until heated through. Serves 5 or 6.


Easy Nacho Chicken
A Mexican-style chicken casserole

INGREDIENTS:

3 to 4 cups cooked diced chicken
16 ounces shredded or cubed American cheese (Velveeta or other process melting cheese)
2 cans (10 3/4 oz each) condensed cream of chicken soup
1 can (approx. 10 oz) diced tomatoes and green chilies, undrained , or use 1 can (14.5 oz) Mexican style stewed tomatoes
1 cup chopped onion
1 can (4 ounces) mild green chile peppers, optional
1/4 teaspoon garlic powder
1/4 teaspoon salt, or to taste
1/4 teaspoon pepper
1 package (14 1/2 oz) nacho cheese tortilla chips
PREPARATION:

In a large bowl, combine chicken, cheese, soup, tomatoes, green chiles, onion, and seasonings; mix well. Crush chips; set aside 1 cup of the chips for topping and blend remaining chips into chicken mixture. Spoon mixture into a greased 13 x 9-inch baking dish; sprinkle with reserved tortilla chips. Bake, uncovered, at 350° for 30 minutes, or until cheese is melted and casserole is bubbling.
Serves 4 to 6.


MEXICAN CHICKEN WINGS

12 ounces tortilla chips
2 tablespoons chili powder
1 teaspoon dried oregano
1/2 teaspoon garlic salt
1 teaspoon ground cumin
1 cup vegetable oil
1 pound chicken wings
8 tablespoons butter, melted

Crush tortilla chips into fine crumbs. Combine crumbs, chili powder,
oregano, garlic salt, and cumin in a medium bowl; set aside.

Heat oil in a large skillet until hot but not smoking, about 365 degrees F.

Add chicken; fry until cooked through, about 15 minutes. Remove; drain
chicken well on paper towels.

Place melted butter in a shallow dish. Dip chicken into butter. Coat chicken wings with tortilla crumbs.

Place on a serving platter. Serve immediately.

VARIATION:
Turn this crunchy appetizer into a hearty entree by using turkey wings instead of the chicken wings.
