Most hot sauces are vinegar based.

Put the peppers in a pot and boil.
Uhhh....mash them all together in a molcajete. A molcajete is a Mexican thing...what do you call those things?...oh yeah--like the RX mortar and pestil, for grinding things. The Mexican ones are the best because they're made of porous black igneous rock and they grind peppers beautifully. You just grind away with the pestil against the mortar until the peppers are made into a thick sauce. Enjoy! =d

You can usually get molcajetes in Mexican grocery stores. They have three little legs and they're very cute. It's shaped like a standing, three-legged pig.

If you don't have a Mexican grocery store near you, or don't have any Mexican neighbors from whom you could borrow a molcajete--don't worry, use any hard surface to mash the peppers against--but don't make a mess! =)

Oh yeah, I think my mom boils the tomatillo and green tomatoes before mashing them. It makes them softer and more delicious.
Jalapeno Hot Sauce (Medium Hot)

12 jalapeno peppers
8 tablespoons red wine vinegar
1 whole lime
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 jar

1. Cut hot pepper in half and remove seeds.
2. Drop in boiling water for 30 seconds to blanche.
3. Squeeze juice from lime and combine hot peppers and all other ingredients in blender and chop.
4. Now put them on high speed to blend all ingredients together.
5. Store in an a wide mouth jar and store in the fridge.
Put one cup of hot peppers, stems removed, in the jar of a blender, add 2 tsp of salt, 1/4 cup cider vinegar, 1/4 cup boiling water, cover with lid and blend until a smooth consistency is achieved. You can add more water and vinegar if you like a thinner sauce. Put this sauce in a jar or other sealed container and refridgerate.
HOT PEPPER SAUCE

3 lbs. onions
3 c. sugar
1 tsp. allspice
1 gallon catsup
1 lb. hot pepper
3 c. vinegar
1 tsp. salt

Combine all ingredients together and boil about 5 minutes. Place in sterilized jars and seal.
NOTE: More or less peppers determine hotness of sauce. I use banana pepper (seeds, etc.). Just clean off ends and any bad spots and wash.
