    how do I make fried rice, exactly the same as in a Chinese restaurant ?

Here are some friends with simlar question as we.And I have this question for many days,anyone help us?

this is really good....

cook the amount of rice you want for your meal a day ahead of time and leave in the fridge (its how the chinese do it) the day you are eating, put some oil in a frying pan and wait for it to be hot. you can tell when it is hot enough because if you look at it closely, you can see it 'dancing' (just moving around slowly) you can then fry up the meat first with some gren onions, then fry up the vegetables and any other ingredients you want to use.. make sure that all the meat and vegetables are cut up very small. the chinese have been doing it like this for years because this way, they can you all the ingredients and not waste anything. after everything is fried, you can then add in the rice you cooked the day before. fry everthing together and add some soy sauce (you can buy it at almost any store) let it fry for a few minutes, and serve. you can add salt and pepper to taste, but soy sauce tends to be enough...its really good.

Serves 4 to 6

This is a basic recipe for fried rice that you can add to as desired. If adding other ingredients, increase the number of eggs to 3.
INGREDIENTS:

1 green onion
2 large eggs
1 teaspoon salt
Pepper to taste
4 tablespoons oil for stir-frying, or as needed
4 cups cold cooked rice
1 - 2 tablespoons light soy sauce or oyster sauce, as desired
PREPARATION:

Wash and finely chop the green onion. Lightly beat the eggs with the salt and pepper.

Heat a wok or frying pan and add 2 tablespoons oil. When the oil is hot, add the eggs. Cook, stirring, until they are lightly scrambled but not too dry. Remove the eggs and clean out the pan.

Add 2 tablespoons oil. Add the rice. Stir-fry for a few minutes, using chopsticks or a wooden spoon to break it apart. Stir in the soy sauce or oyster sauce as desired.

When the rice is heated through, add the scrambled egg back into the pan. Mix thoroughly. Stir in the green onion. Serve hot

you can't make it exactly the same but it depends on what rice?
egg fried rice is simple, scramble two eggs in a frying pan, put onion, peppers, sweetcorn whatever you fancy in there and then add the rice. simple
but it will never taste the same, been there tried that.


Restaurant Style Fried Rice

Ingredients
3 cups cooked cooled rice (preferably overnight cooked rice)
2 eggs, lightly beaten
2 tbsp oil
1 tsp sesame oil
1 tsp chopped garlic
100g prawns, shelled and diced
2 dried Chinese mushrooms, soaked and shredded
1 pair Chinese sausages, sliced
2 tbsp frozen green peas

Seasoning
1 tbsp Premium oyster sauce
1 tbsp light soya sauce
1/4 tsp salt
1/8 tsp pepper
1/8 – 1/4 tsp sugar or to taste
1/2 tsp chicken stock granules

Garnishing
1 tbsp chopped spring onion and sliced red chilli

Method
Heat 2 tablespoons oil in a wok and fry beaten eggs until just cooked. Remove and set aside.

Reheat wok with 3–4 tablespoons oil till smoking hot, add garlic and fry until golden and fragrant. Add prawns, mushrooms and sausages.

Stir-fry for a minute, then add in rice and mix in seasoning and green peas. Stir briskly to mix the ingredients thoroughly. Add sesame oil to glaze the rice. Return the eggs to the wok and mix well to blend.

Dish out and garnish before serving. you can never have it exactly the same as in a chinese restaurant no matter what recipes that all the other kind folks are posting here. That is because unless u have exactly the same type of stove that are used in the chinese kitchen, it would never happen. the key to nice flavourful fried rice in restaurant is the "wok hei", literally translated as "the wok's breath". the fire from the stove can reach about half a meter in height if turn on full blast. Uninitiated can have their hair and eyebrows singed. I saw my classmate does that during practical in cooking school. :)

cheers Okay, here is a way to make it without relying on having cooked rice from the night before. A Thai friend showed me this way.
2 cups of uncooked rice, 1 tbs of oil, heat the rice on high until the it is translucent from the oil and starts toasting slightly. Add 1/2 cup of soy sauce and 3 cups of water or chicken broth. Bring to a boil and break 2-3 eggs into water, stir to break up eggs. Cover and simmer rice until done.
Add desired meat/vegetables.
I use ground pork, a can of mixed Asian veges (bean sprouts, water cress, baby corn), frozen peas and maybe some Chinese cabbage. No matter what I do I can't cook like the way they do in the restaurant. You can't cook like they do in the restaurants because of the heat on your stove. The heat on the stove is higher in the restaurant, that's what it never taste the same at home
