Recipe for seafoam frosting, a boiled frosting made with egg whites and brown sugar.
INGREDIENTS:
1 egg white
3/4 cup light brown sugar, firmly packed
3 tablespoons water
1 teaspoon light corn syrup
1/2 teaspoon vanilla
PREPARATION:
Combine egg white, brown sugar, water and corn syrup in top of double boiler and mix thoroughly. Place over rapidly boiling water; beat constantly with mixer until mixture holds up in peaks (about 7 minutes).
Other Answers:
Take white frosting and use green and/or blue food coloring to make what appears to be "seafoam" frosting. Remember to let some of the white frosting show through as the "foam" in your frosting. You might also use Goldfish Crackers as your fish.

TO MAKE THE CAKE:
1 c all purpose flour
1 1/2 c sugar
1 tsp baking powder
10 egg whites, stiffly beaten
1 tsp vanilla
Mix, sift flour, sugar, and baking powder 3 times. Add this to the egg
whites gradually--stirring after each addition. Add vanilla. Place
into a well greased pan and line this pan with waxed paper also. Bake
at 350* for 35 - 45 minutes.
Sea Foam Sauce
2 Tbsp butter
1/2 c sugar
2 Tbsp flour
1 egg yolk
1 egg white, stiffly beaten
1 tsp vanilla
1/2 c boiling water
Cream butter. Mix flour with sugar. Cream into the butter. Add yolk,
beat well. Add boiling water and cook over hot water until thick.
Cool. Fold in egg white and vanilla. Spread over cake gently. Serve.
