Here are some friends with simlar question as we.And I have this question for many days,anyone help us?

As everyone else has already said - it is very important to not overcook it.

The best way I've found to make calamari is to soak it in buttermilk for as long as possible before cooking. Several hours is good, and overnight is better. The buttermilk tenderizes it a bit and adds some flavor.

When you're ready to cook the calamari, drain off the buttermilk and then dredge in seasoned flour. I like put it in a sieve to shake off the excess.

Deep fry - just until golden!

Don't overcook it. That's the number one cause of chewy calamari.
Don't overcook it. Frie it at very high temperature briefly.....that gives a nice, crisp, Calamari
boil for one minute, the flash cool in ice , prior to frying. fry until light golden brown.

marinade the calamari w/some baking soda bout 10 min. rinse off in cold running water. boil some water, put the calamari in, turn off heat, leave it in for 15 min. & u're good to go, do not over fry them.

If frying, cook it quickly.

If sauteing, saute quicly as well or cook for 2 hours.

Cook squid quick or long, but no where in between.
