Use the nestle tollhouse cookie recipe- It's the best, and they always turn out chewy. Just make sure you cook them for the minimum amount of time (Until they just start to turn a LITTLE brown)

Bake the cookies until they are a very light brown around the edges, and once they have cooled, store them in an airtight container. To make them crunchy, put them for the maximum baking time. TO make the chewy, bake them for the minumum time.
I use part butter and less cooking time.
I found that if you take them out slightly before they are all the way done, they are soft. If you keep bread on top of the cookies once they are done they will remain soft.look if you want soft chewy cookies bake them an adverage of 8 min just long enough for them to be done the longer you cook them the harder they will be use butter instead of margarine

This may sound gross, I don't even like Mayonnaise, but I always add about a tablespoon of it to anything sweet i bake it helps make it more moist, & you CAN'T even taste it...LOL I promise also I would try pulling them a few minutes before they are done...& last but not least, when u store them put a slice or 2 of Bread in the storage container the bread will get hard, but it keeps moisture in the cookies...Hope these ideas help you, Best of Luck!!!
