Homemade Potato Chips

A potato chip recipe posted to the forum, using potatoes and oil for deep frying.
INGREDIENTS:

6 or more medium lg. potatoes
Oil or fat for deep frying
Salt
PREPARATION:

Wash and peel the potatoes. Slice very thin.
An old fashioned cabbage slicer can be used (careful of the fingers) - or use a sharp knife or food processor with a thin slicing blade.

Put the slices at once into a bowl of cold water and let stand for at least one hour.

Ice water is best, but you can set the whole bowl in the refrigerator if you wish. Dry well by shaking them in a towel.
Fry in hot oil at 390 degrees F. until a light golden brown. Don't try frying too many at once, better to put one layer on the frying basket. Drain on paper towels or any kind of plain crumpled absorbent paper.

If you haven't any paper, use a worn dish towel. Salt lightly. These can be kept for some time if they are sealed into plastic bags or containers after they have cooled.

put potato slices in hot water salted for five minutes and drain the water out. put them in hot oil to make chips
Use a potato peeler to get the slices really thin and fry them in super hot oil (be really careful of course with hot oil) for a few seconds
I like potato skins... just skin the potates very thinly.. place on a plan and throw them in the oven.... season with salt & pepper... use rest of potato for something else:) yum
Homemade Potato Chips
2servings
. 45 minutes 15 mins prep
1 1/2 cups clarified butter
1 1/2 cups canola oil
4 potatoes
kosher salt

Heat clarified butter and oil in a medium, deep saucepan to 300°. Cut unpeeled potatoes into paper thin slices; deep-fry in batches for 4-5 minutes or until crisp and oil around chips is no longer bubbling. (Moisture in potatoes causes the bubbles; once the bubbles stop, the chips will be crisp) Drain on paper towels; sprinkle with kosher salt.

what most ppl have said is right but i like to also roast off some onions cut up into jullien 4 by 2 in the oven till they are soft with rossmary and lots of salt and a bit of sugar.

Peel or slice your potatoe (depending on how good your knife skills are) fry then quickly(hot) in oil drain off oil then roll in onions and more salt and garlic (just a little)

if u wanna try somthin diffrent do it with sweet potatoe or Koomera ( thats what we call them in Australia so hope u know what im talkin bout. U need to do these bad boys with your peeler they taste great less salt with those and no sugar!!

I actually use them in my resturant as a garnish so if you wanna use them to garnish like a steak they are great!

good luck be safe with hot oil and DONT tip it down the drain!!!!!!
by adding crispy salt to your chips.
slice your potatoes with a peeler and drop them in ice water for 30 minutes and drain and dry with paper towels befor you drop them in hot oil and fry till brown.
dry on paper toweling. If this doesn't work crisp them up in the oven before eating
