Ooh get the velvita falmily pack...it tells you how to make it on the back..boil and milk, and the cheese comes with it. Omg its the best.

My husband is a M&C fanatic and this recipes ROCKS!
Ingredients:
2 tablespoons (1/4 sticks) butter
3 large red bell peppers (about 1 1/2 pounds), cut into 1/2-inch pieces
5 celery stalks, chopped
1 1/2 cups whipping cream
1 1/2 cups half and half
1 pound blue cheese, crumbled
1 teaspoon celery seeds
Cayenne pepper
3 large egg yolks
1/2 cup chopped celery leaves
1 pound penne
3/4 cup freshly grated Parmesan cheese (about 2 ounces)
Directions:
Melt butter in heavy large skillet over medium-high heat. Add bell peppers and celery and sauté until just beginning to soften, about 7 minutes. Remove from heat. Season with salt and pepper.
Combine cream, half and half and blue cheese in heavy medium saucepan. Stir over low heat until cheese melts. Remove from heat. Add celery seeds. Season sauce with cayenne, salt and pepper. Beat yolks in medium bowl to blend. Gradually whisk in half of cheese sauce. Return mixture to saucepan and whisk to blend. Add celery leaves.
Butter 13 3/4x10 1/2x2 3/4-inch (4-quart capacity) oval baking dish. Cook pasta in pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain. Return to same pot. Add sauce and vegetables; stir to blend. Transfer to baking dish. (Can be made 1 day ahead. Cover; chill. Let stand at room temperature 1 hour before continuing.)
Preheat oven to 400°F. Sprinkle Parmesan over surface of pasta. Bake until pasta is heated through, sauce is bubbling and top is beginning to brown, about 25 minutes.
Serves 12.

Start with a bechamel sauce. You can find the recipe on the internet. Add cheese (a combination of american and cheddar is good) salt and pepper to taste. Simple recipe. Bechamel sauce makes a delicious, creamy base for homemade mac and cheese.

Hey! This is not a straight mac n' cheese, but all hte guys I know LOVE it. They would rather eat this than regular any day. I am not a big hot dog fan, but this is yummy! I use bratwurst, knockwurst or sausages etc. But you can use hot dogs if you prefer.
1 pound macaroni
Salt
2 tablespoons extra-virgin olive oil, divided
1 package sausages or wurst, chopped into 1-inch pieces
1 tablespoon butter
1 medium onion, finely chopped
2 tablespoons all- purpose flour
1/3 of a bottle of beer, chicken broth can be substituted
2 cups milk
Pepper
1 rounded tablespoon spicy mustard
2 rounded tablespoons ketchup
3 cups yellow sharp Cheddar, shredded, divided or 1 1/2 packages of pregrated. You can do a mixture of cheeses if you want to.
Cook macaroni using salt, cook about 7 minutes until just under al dente in doneness.
Preheat broiler and set rack 12 inches from heat.
While cooking pasta, heat a large deep nonstick skillet over medium-high heat. Add 1 tablespoon extra-virgin olive oil and turn of the pan, add sausages and brown on both sides, about 4 minutes. Remove the dogs with a slotted spoon to a paper towel lined plate. Add another tablespoon extra-virgin olive oil and turn of the pan. Then add the butter. When butter melts, cook onions 4 to 5 minutes, then add flour and cook another minute. Add beer and cook off completely, 1 minute. Whisk in milk and bring to a bubble, then season the sauce with salt and pepper and stir in the mustard and ketchup. Lower heat and add 2 cups of the cheese. Stir to melt, 1 minute. Adjust mustard, ketchup, and salt and pepper, to your taste.
Drain pasta well. Combine pasta and hot dogs with sauce and coat evenly then pour into large casserole and top with remaining cheese. Melt and brown cheese under broiler, 2 minutes. Serve.
I was a little worried about eating this myself, but knew the guys would like it and now we all do. It'll impress him to go a step beyond mac n' cheese!

Mix up your cheeses! Try Vermont white cheddar or even a mixture of half sharp cheddar and half Monterey Jack cheese with jalapeno peppers.
2 cups uncooked elbow macaroni(7ounces)
1/4 cup butter or stick margarine
1/4 cup all purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground mustard
1/4 teaspoon Worchesterchire sauce
2 cup milk
2 cups shredded Cheddar cheese (or above substitutes)
1. Heat ove to 350
2. Cook macaroni as directed on package
3. While macaroni is cooking, melt butter in 3 quart saucepan over low heat. Stir in flour, salt, pepper, mustard, and Worchesershire sauce. Cook over low heat stirring constantly, until mixture is smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute; remove from heat. Stir in cheese until melted.
4. Darin macaroni. Gently stir macaroni into cheese sauce. Pour into ungreased 2 quart casserole. Bake uncovered 20 to 25 minutes or until bubbly.

For a grown-up version of M&C, I use Gruyere, Fontina, a bit of mild or med. cheddar, and a few crumbles of Blue cheese. Homemade croutons (bread crumbs) go on top and get baked until they are cripsy/crunchy!
This recipe is so decadent, you'd better wear your stretchy pants to stupper! ;)

2 cups white sauce* (above)
2 c ups yellow cheddar
2 cups Muenster cheese
Add cheese to white sauce and stir. (Save a bit of cheese for the topping.) Stir sauce into macaroni and place in a buttered casserole dish. Place in 350° oven until slightly brown and bubbly on top -- 25-30 minutes.
