It depends on the type of dressing you want. But usually you would start by pureeing your vegetables or fruit if using any, then adding the acidic liquid ie.. lemon juice, vinegar or wine. then adding seasonings salt & pepper and or anyother herbs that you prefer. Rosemarry for instance if thats what you are looking for in a dressing(such as a recipie I make with Extra Vergin Olive oil, Diced and deseeded roma tomatoes,rosemarry, Basil, diced kalamata olives, diced red onions and balslamic vinegar. Very tasty over spinnach with diced egg, fett cheese and peperoncini peppers then sprinkled with a 1/4 of a fresh lemon squeezed over the top). Once you have your puree add your vinegar or lemon juice or wine blend well then slowly add your oil untill you have the consistency you are looking for. once you have the conistency add salt & peper to taste.
